Vegan and gluten free Tresomega quinoa fusilli pasta is the star of this skillet dish, with Tofurky, artichoke hearts and nutritional yeast added to make this the ultimate vegan pasta skillet dish, that will satisfy even the most diehard gluten-loving, carnivores in your life!
I was provided with the Tresomega pasta used in this post, in order to develop a recipe highlighting their amazing pasta. All photos, recipe, thoughts and opinions are my own.
I was inspired by the Tresomega gluten free and vegan fusilli pasta I received, and decided to create a pasta skillet dish that was completely vegan and easy to make. The perfect weeknight dinner that is simple to make and uses just two pans! This will satisfy the whole family and give you leftovers too (which in my opinion tasted even better the second day of eating this meal).
Now you can choose the add-ins to your pasta skillet dish to your preferences. Like mushrooms? Tomatoes? Asparagus?? Any vegetable or protein would work well in this pasta skillet dish because the sauce is a simple olive oil sauce, made cheesy by the addition of nutritional yeast.
Vegan Cheesy Quinoa Pasta Skillet Dish

- 1 (8-ounce) package TresOmega Quinoa Fusilli Pasta
- 1 (14-ounce) can artichoke hearts
- 1 (14-ounce) package Tofurky Italian Sausage
- 1 teaspoon fresh, minced garlic
- 1/3 cup nutritional yeast
- 3 tablespoons pasta water
- 3 tablespoons coconut oil or olive oil
- 1 teaspoon Italian seasoning
- pinch of salt
Instructions
In a medium sized pot, add four quarts of water and bring to a boil. Heavily salt the water. Cook pasta according to package directions. Once pasta is cooked to your desired doneness, remove from heat. RESERVE THE PASTA WATER FOR THE SAUCE.
In a large skillet over medium heat, add the artichoke hearts, Tofurky and garlic. Cook until browned and artichoke hearts are tender. Add the nutritional yeast, pasta water, olive oil, Italian seasoning and salt to the skillet. Stir until combined. Add in the drained, cooked pasta and stir until pasta is coated in the sauce and "meat" and vegetable mixture. Serve warm.
Notes
Store leftovers in the refrigerator in an airtight container. Stays fresh in the fridge for 4-5 days.
So what does gluten free quinoa pasta taste like?! Just like regular pasta!! Unless you told me it was quinoa, I might not have even been able to tell the difference…maybe just a slightly nutty taste? I loved it though!!
