Vanilla No Bake Cookies

Vanilla No Bake Cookies are like the classic Chocolate No Bake Cookies, but vanilla flavored instead! A box of dry, instant vanilla pudding and pie filling, milk, vanilla extract and white chocolate make these vanilla cookies VERY vanilla!

Vanilla No Bake Cookies

Serves: 20 Cooking Time: 1-minute

Ingredients

  • 3/4 cup unsalted butter
  • 2/3 cup evaporated milk
  • 2 cups white granulated sugar
  • 1/4 cup white chocolate chips
  • pinch of salt
  • 2 teaspoons vanilla extract (I used Rodelle Organic Baker's Extract)
  • 1 (3.4 ounce box) vanilla instant pudding and pie filling - just the dry mix
  • 3 to 3-1/2 cups quick oats

Instructions

Lay a long strip of foil on your counter, to drop your cookies on after they cook. In a medium sized pot, on the stovetop over medium heat, add the butter, milk and sugar. Stir mixture occasionally and bring it to a boil. Once mixture reaches a boil, set timer for 1-minute.

After 1-minute, remove the pot from the stove and stir in the white chocolate chips, vanilla extract, salt, and half of the oats. Slowly stir in the dry pudding mix into the pot. If you add it too quickly, it will start to cook and clump up. Once all of the pudding mix is mixed in, stir in the white chocolate and remaining oats. Add the remaining oats slowly, stopping once you reach the consistency of a thick, wet oatmeal. You do not want the mixture to be dry. The amount of oats you need to add may vary on the humidity of where you live.

Stir until all ingredients are completely combined. Use a cookie scoop to drop desired sized cookies onto the strip of foil. Let cookies set and cool.

Notes

Store cookies in an airtight container at room temperature.

    Kelly, as I get older, I love vanilla more and more. I think when I was a kid, we thought of β€œvanilla” as β€œplain.” Crazy, right, because it’s so much more than that! I love a no-bake, too, perfect for summer! Thanks for the recipe!

    Kelly This the first time I have ever found a no bake vanilla cookie as I am not a fan of chocolate cookies. So I can’t wait to try these at Christmas. I don’t bake very much during the year as I do Christmas cookies for family & friends. But i will send you a comment how they went afterwards.     Yes the one cookie we all liked when we were growing up ( my sisters and brother) were just regular sugar cookies my mom would make at Christmas time. Boy I wish I had one now. Thanks,

    these look so tasty! also heard that some people use vanilla extract as a perfume and i have to say that sounds like a good (and easy and cheap) idea lol.

      Thanks Heather! I can see someone using vanilla extract as perfume. Every time I open my bottle of extract I have to take a long whiff of it and go “ahhhhhhh” LOVE VANILLA!!

    I have seen the chocolate version of these cookies, and have not really been craving it to try, but the vanilla, I can get on board with. Looks super easy, then can always dunk part of it into melted chocolate if the little extra is desired. Pinned to try!

    What adjustments would need to be made to make these in a butterscotch version other than the pudding?

      I actually have a no bake butterscotch cookie recipe on the blog using butterscotch chips. Otherwise you could just use this recipe and use butterscotch flavored pudding instead of the vanilla.

    These sound so good!! I am not a big chocolate fan so can’t wait to try them. I am curious as to whether or not they are super sweet. 2 cups is a lot of sugar.

      Thank you!! I have made these several times and no one has said they are too sweet. But we like sweet desserts around here! You can reduce the sugar if you like, but you will also need to adjust the amount of oats you add. You want enough oats in the mixture that it’s still loose, but holds it shape and not liquidy. If you add too much oats, they will be dry and crumbly.
