Two ingredients and a few minutes are all you need to make these healthy, fudge-like brownies!! These are super simple to make and even easier to eat. Whoops! But since they are healthier, I figured I could eat as many as I want right?? RIGHT????
I always need to throw a healthy dessert recipe on the blog every now and again to balance out all the other sugary-filled treats I share with you! So with a box of sugar free brownie mix and a can of pure pumpkin, and 2-minutes of prep, I was just 25-minutes of baking time away from fudgy, chocolatey goodness!
All you do is open the box of brownie mix and pour the dry mix in a bowl and stir in the entire can of pure pumpkin into the dry mix. Just make sure it is PURE pumpkin you are using and not pumpkin pie filling (which has sugar, etc in it). I added a couple teaspoons of vanilla extract for added sweetness, but that’s totally optional!
Do you have to use sugar free brownie mix? NO!! Use regular brownie mix if that’s what ya got…it just will have the added sugar that the sugar free mix doesn’t have.

- 1 (12.35-ounce) box Pillsbury Sugar Free Brownie Mix (just the dry mix only)
- 1 (15-ounce) can pure pumpkin
- 1-1/2 teaspoons vanilla extract (optional)
Instructions
Preheat oven to 325-degrees and line an 8-inch x 8-inch square pan with foil. Spray the bottom and sides of the lined pan lightly with baking spray and set aside.
In a medium-sized bowl, add the entire dry mix from the box and the entire can of pure pumpkin. Stir together until well incorporated. Stir in the vanilla extract (if including). Pour batter into prepared pan.
Bake in 325-degree oven for 25-minutes. Brownies may look under done, but allow the baked brownies to set and cool completely in the pan before cutting into desired sized squares.
Notes
If you like you brownies more well-done, then add an additional 3-4 minutes of bake time. Store brownies at room temperature in an airtight container for up to one week.
These brownies have a dense, moist and fudge-like texture to them….not your average brownie (giving you fair warning here).
