Three Ingredient Strawberry Fudge

Strawberry fudge made easily in the microwave using just three ingredients!  And no candy thermometer is needed.  Are you looking for a sweet treat for your Valentine’s Day sweetie?  Maybe you don’t bake and making candy scares you…well fear not my friends…that’s where this easy fudge comes in to save the day!  

If you are a follower of the blog for some time, then you know my love of homemade buttercream frosting.  But we are going to cheat today in order to make this easy fudge.  So go to the store and buy yourself a tub of strawberry frosting, a package of white chocolate chips and a package of freeze dried strawberries (so we can pretend it’s healthy because there’s fruit in it!).  And sprinkles!!

Are you scratching your head right now asking yourself, “Strawberry fudge???”  Yes.  Trust me.  This fudge tastes like a strawberry milkshake.  So have your strawberry milkshake and eat it too hahaha.

Any big plans for Valentine’s Day?  I’m not huge on Valentine’s Day.  I’m working all day anyways, so pretty much it will be an evening of cuddling with my Yorkie on the couch, and watching television before heading to bed once the street lights turn on.  Oh yeah….party animals over here!

Three Ingredient Strawberry Fudge

Serves: 20-30 Cooking Time: 1-minute

Ingredients

  • 1 (12-ounce) bag white chocolate chips
  • 1 (16-ounce) container strawberry frosting
  • 1 cup freeze dried strawberries
  • 1/4 cup Valentine's Day sprinkles (optional)

Instructions

Line a 9-inch x 9-inch baking pan with parchment paper or foil and spray with baking spray. Set aside.

In a microwave safe bowl, add the entire bag of white chocolate chips. Melt the white chocolate in the microwave, stopping every 15-seconds to stir. Do not over cook your white chocolate in the microwave. Chips should melt within 90-120 seconds.

Remove bowl from microwave once the white chocolate has melted and immediately stir in the entire tub of strawberry frosting. Stir until the chocolate and frosting is combined. Fold in the freeze dried strawberries.

Pour the mixture into the prepared pan and top with sprinkles if desired. Let fudge set at room temperature for 30-minutes, then transfer to the refrigerator to cool completely before cutting into desired sized squares.

Notes

Store fudge in the refrigerator, in an air tight container. Fudge will stay fresh for 7-10 days.

Soft, fluffy and creamy.  That’s how I would describe this Strawberry Fudge.

    I have an affection for pink treats and so naturally I am drawn to these pretty strawberry fudge squares. Cannot believe they are so easy to make. The freeze dried strawberries sound really good right now. Maybe use some extra of them chopped small instead of the sprinkles. Pinned!
