Yep…that’s right! Only three ingredients needed to make these peanut butter cookies! Peanut butter, white sugar and eggs are all you need. One bowl recipe and no chilling required. It doesn’t get much easier than these cookies…oh and they are peanut-buttery delicious of course! And accidentally gluten free since there’s no flour in these cookies 🙂
I am all about the easy recipes. I know there are a few of you out there that are intimidated by baking, so again, this recipe is going in my no-fail file. Think you can’t bake?? I made these cookies for my daddy for Father’s Day. Is it just me or does it seem like most men LOVE peanut butter cookies?? My dad likes his crunchy. You can bake these cookies to your desired doneness though. 15-minutes will yield a crunchier cookie and 12-minutes a chewier cookie. Your choice my friends 🙂
Three Ingredient Peanut Butter Cookies

- 2 cups creamy peanut butter
- 2 cups white granulated sugar
- 2 eggs
- 1/4 cup sugar (for rolling cookies in)
Instructions
Preheat your oven to 350-degrees. Line three baking sheets with parchment paper and set aside.
In a large bowl, stir together the peanut butter, sugar and eggs until completely combined. Use a standard sized cookie scoop to scoop cookie dough balls. Roll the balls in sugar and place on the cookie sheets. Use a fork to put crisscross marks across the tops of the cookies.
Bake cookies one cookie sheet at a time in 350-degree oven for 12-15 minutes (depending on how crunchy you like your cookies). Let cookies set on the cookie sheet for several minutes before transferring to a wire rack to finish cooling completely.
Notes
Store cookies in an airtight container at room temperature.

I would be willing to say I have made a trailer truck full of these. I wanted to send you a picture of my great grandson and myself making these cookies the first time I seen him, they lived in California and were military but can’t figure out how to do it.
