Thin mint cookie bites that are not only no bake, but rich in chocolate and mint taste, just like the Girl Scout cookies, but without any dairy, soy, eggs, gluten or sugar.
If you have a food allergy and want something sweet, these Thin Mint Cookies pretty much address every food allergy there is, so this is a great recipe for you. I used Lorann Professional Kitchen Peppermint Bakery Emulsion for the peppermint extract, but you can use whatever brand peppermint emulsion or peppermint extract you like. Make sure it is peppermint and NOT MINT EXTRACT. This makes a difference in how they taste.
Thin Mint Cookie Bites

- 1 cup Nuzest Rich Chocolate Protein Powder (or your preferred brand of chocolate protein powder)
- 3-1/2 tablespoons unsweetened cocoa powder
- 5 tablespoons coconut oil, slightly melted
- 1/2 teaspoon liquid stevia extract (or more if you like them sweeter and depending on the amount of sugar in your protein powder)
- 1 teaspoon peppermint extract
- Pinch of salt
Instructions
Line an 8x8-inch baking pan with parchment paper and spray with baking spray. Set aside.
In a medium sized bowl, add the chocolate protein powder, unsweetened cocoa, coconut oil, stevia, peppermint extract and salt. Mix until well combined. You may need to add water, in small increments, to get desired consistency.
Pour mixture out into prepared pan, spreading the mixture into an even layer in the pan.
Place pan in the refrigerator or freezer for several minutes until set. Once set, cut the cookies out using a round cookie cutter or just cut up into squares.
Option to roll the dough into balls instead, flatten slightly with your hands and place in the refrigerator to set.
Notes
Store cookies in the refrigerator in an air tight container. Cookies stay fresh for 4-5 days.
