Rice Crispy Treats

What’s so special about a no-bake dessert made using marshmallows, butter and Rice Krispies cereal??  Well…I have a secret ingredient I use to make my marshmallow treats that will have people oohing and ahhing over a treat that is really quite simple. 

Rice Crispy Treats

Serves: 30 Cooking Time: 0-minutes

Ingredients

  • 1/2 cup unsalted butter
  • 8 cups (one 16-ounce bag) mini marshmallows, divided
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt (omit if using salted butter)
  • 1/3 cup white chocolate chips
  • 8 cups Rice Krispies cereal

Instructions

Line a 9x13-inch baking pan with foil. Spray the sides and bottom of the pan with baking spray and set aside.

In a medium-large pot, on the stovetop, add the butter to the pot. Melt the butter over medium-high heat. Once the butter is melted, add seven cups of mini marshmallows to the melted butter. Melt the marshmallows into the butter completely, stirring constantly. Once the marshmallows are completely melted, remove the pot from the stove and turn the stove off.

Immediately add the vanilla extract, salt and white chocolate to the melted marshmallows and stir until well incorporated. Stir in the Rice Krispies into the marshmallow mixture, one cup at a time, fully mixing in each cup of cereal before adding the next. At the fourth cup of cereal, add one cup of mini marshmallows, and stir into the mixture until combined. Add the remaining cups of cereal.

Pour mixture out into prepared pan. Spray one hand with baking spray to gently push the marshmallow treats so there is an even layer in the pan. Do not push hard on the treats or you will get tough treats.

Notes

Store treats in an airtight container at room temperature. Treats stay fresh for several days.

These Rice Krispies Treats are ooey, gooey, rich and decadent—thanks to the white chocolate (my secret ingredient).  YOU CANNOT TASTE THE WHITE CHOCOLATE!  The white chocolate just gives these treats the ultimate, over-the-top rich, vanilla-y flavor.

    Omg I totally add in too many marshmallows on purpose when I make these with the kids just to make them extra gooey! I never would have thought to add white chocolate….damn! I will def being throwing some in next time now 😉

    These are so amazing Kelly! I’ve made RK squares a gazillion times and I’ve found them either too chewy (too much marshmallows) or too dry, it’s all about the balance and these are it!! I LOVE the white chocolate added, GENIUS! I never would have thought to add that it there and I’m a big white chocolate fanatic. Thanks for sharing your recipe, girl. LOVE THESE!
