Sweet Treats You Can Make In Your Sous Vide Machine
Cooking in a sous vide machine is a great way of making easy desserts. You can be really precise if you need to cook something consistently at a low temperature.
This makes it perfect, particularly for custards and creamy puddings. It’s also a great way of cooking fruits and infusing them with different spices and flavored oils, and can give your desserts a real intensity and depth of flavor that you won’t get with other methods of cooking.
Lemon and Lime Yogurt
Infusing natural yogurt with citrus will give it a delicious zing – perfect for a light breakfast, or an accompaniment to cake. It has an interesting taste that is much more intense than simply mixing some citrus rind into yogurt. Cooking it in your sous vide will make the yogurt rich and creamy. The water bath is versatile, and lends itself well to preparing these natural sweet treats.
Ingredients
- ½ cup yogurt
- 1L of full fat milk
- 1 tablespoon of lime zest
- 1 tablespoon of lemon zest
Method
In a pan, heat up the milk to 180°F. You should then let it cool to 110°F, either at room temperature or over a bowl of ice. Stir the yogurt and citrus zest into the milk. Pour the mixture into sterilized canning jars and put the lids on. Place the jars into your sous vide machine, and cook for 3 hours at 113°F.
Saffron and Blackberry Creme Brulee
A creme brulee is a party favorite – perfect for the end of a sophisticated meal with friends and family. It cooks incredibly well in a sous vide machine, and the result is creamy, smooth and full of flavor.
Ingredients
- 4 egg yolks
- 2 cups of heavy cream
- A cup of blackberries
- ½ cup of brown sugar
- A pinch of saffron
Method
In a saucepan, heat the cream gently and add the saffron – do not let it boil. In a separate bowl, whisk the eggs and sugar together until they have a fluffy texture. Gently fold this into the cream. Place the blackberries in the bottom of some canning jars, add the custard mix on top of this, and seal the lids. You should then cook this in your sous vide machine at 176°F. Remove the jars, and allow them to cool. Refrigerate the dessert for at least 4 hours before serving. When you are ready to present your creme brulee, sprinkle the top with sugar, and blow torch for that classic crunch.
The sous vide machine is a great way of cooking some delicious and tasty desserts. You can make them ahead of a party so that they are ready to serve when you want to eat them.
