Sweet Potato Pie Wontons

The warm, sweet flavors of sweet potato pie, wrapped up in a crispy, baked wonton!  I used my handy, dandy air fryer to “fry” my wontons, but I also included instructions on how to bake these as well.  Do you have leftover sweet potato pie or leftover sweet potato pie casserole sitting in the fridge from Thanksgiving?!  These wontons are a fun way to use up those leftovers too.

I received the JSL Foods Twin Dragon wonton wrappers used in this post, for free, in order to create a recipe using their wrappers.  All thoughts, opinions, recipe and pictures are mine.

Ahhhh….Thanksgiving.  The over abundance of food.  Which means leftovers too right?!  These Sweet Potato Pie Wontons can be made from scratch using my recipe below, or you can just scoop your leftover sweet potato pie right into the middle of a wonton wrapper, bake or air fry your wontons, then brush with butter and roll the wontons in cinnamon and sugar.

Leftovers reimagined!  But for me I don’t have a fridge full of leftovers, so I am making my filling from scratch.  James and I both worked over Thanksgiving, but luckily I got to stop by the firehouse and say a quick hi before things got all crazy in Modesto.  And just because I was working all day, don’t think for a second that I didn’t get out of cooking!  I was in charge of making breakfast and one of the desserts for the firehouse Thanksgiving James and his crew had.  I made three breakfast tater tot casseroles and my mom’s famous apple “strudel.”  I was up at 5am cooking and then off to work I went!

Anyways…back to these Sweet Potato Pie Wontons!  I am so excited about these!!  So easy and so fun….and you can make these any time of the year.  No leftovers needed, so make these instead of pie for your holiday parties this year.  The wonton wrappers from JSL Foods Twin Dragon are super easy to use and don’t stick together in the package.  They are easy to fold and do not tear (even with my heavy hand!).

So gather all your ingredients and lets get folding!  Make as many or few of these wontons as you want or need, or depending on the leftovers you are trying to use up.

STEP BY STEP WONTON DIRECTIONS (WITH PICTURES!):

Place JSL Foods Twin Dragon Won Ton Wrappers in a diamond shape and brush egg wash along the edges:

Add a teaspoon of sweet potato pie filling and mini marshmallows on the middle of the wonton wrapper:

Fold the bottom corner of the wonton wrapper to the top, to form a triangle.  Crimp the edges with a fork and brush egg wash lightly across the top of the wonton.  And now you are ready to bake or air fry!

Sweet Potato Pie Wontons

Serves: 10 Cooking Time: 10-minutes

Ingredients

  • 2/3 cup mashed canned sweet potatoes
  • 2 tablespoons light brown sugar, packed
  • 1/2 teaspoon cinnamon
  • 30 mini marshmallows
  • 10 JSL Foods Twin Dragon Wonton Wrappers
  • 1 egg
  • TOPPING:
  • 2 tablespoons butter, melted
  • 2 tablespoons white sugar
  • 1 teaspoon cinnamon

Instructions

If baking, preheat oven to 375-degrees, line a baking sheet with parchment paper and set aside. If using leftover sweet potato pie or sweet potato casserole, skip to step #3.

Open your can of sweet potatoes and drain the excess juice. Use a potato masher to mash the sweet potatoes until they are mostly smooth, then measure out 1/3 cup of your mash. In a small bowl, stir together the mash, brown sugar and cinnamon.

Lay out your wonton wrappers in a diamond shape. In a small bowl, beat the egg and then use a pastry brush to brush the edges of your wonton wrappers with the egg. Add a teaspoon-sized dollop of your sweet potato mixture in the middle of the wonton wrapper and place three mini marshmallows on top of the mixture. Fold the wonton wrapper over, forming a triangle. Crimp the sides of the wonton to prevent the filling from escaping and brush the top with egg wash.

If baking, place your wontons on prepared baking sheet and bake for 12-minutes in 375-degree oven, or until the edges are golden brown. If using an air fryer, line the basket with foil (for easy cleanup) and spray with baking spray. Place wontons in fryer basket and insert basket into air fryer. Set air fryer at 360-degrees for 5-minutes. After 5-minutes, open air fryer and turn wontons over. Air fry for an additional 2-minutes at 360-degrees.

In a small bowl, mix together the white sugar and cinnamon. Brush baked or air fried wontons with the melted butter and dip the wontons in the bowl of cinnamon and sugar, coating the wontons completely in the cinnamon-sugar mixture.

Ohhhh….that cinnamon and sugar coating!

And ooey-gooey marshmallow….

    We never have leftovers of our sweet potato souffle. But these little sweet potato pie wontons sound magnificent, and we like sweet potatoes, so I am going to try them. I’m glad that you at least got to stop by and say Hi to your hubby.

    Totally love this idea, Kelly! I’m wishing I had an air fryer! Baking just doesn’t seem as fun, or as impressive for this “fried” wonton. But count me in, it’s on my Christmas list!
