Strawberry flavored Rice Krispies are used to make this fun strawberry-flavored marshmallow treat. The addition of white chocolate and strawberry jam set these Rice Krispies treats over the top! Easy, no bake recipe that you can whip up in mere minutes. Because you know I love my marshmallow treats and any dessert that is easy to make.
I used the Strawberry flavored Rice Krispies for this recipe. But if you can’t find these, just use regular Rice Krispies and add 1-1/2 teaspoons strawberry extract (more or less depending on your desired flavor) and pink food coloring .
The seedless strawberry jam I added to these treats give them the perfect amount of extra strawberry flavor.
Strawberry Rice Krispies Treats
Print RecipeIngredients
- 1/2 cup unsalted butter
- 8 cups (one 16-ounce bag) mini marshmallows, divided
- 1 teaspoon vanilla extract (I used Rodelle Bakers Extract)
- pinch of salt
- 1/3 cup white chocolate chips
- 2 tablespoons seedless strawberry jam
- 6 cups Strawberry Rice Krispies cereal (see note below for substitute)
- OPTIONAL: Fruity mini marshmallows for topping
Instructions
Line a 9x13-inch baking pan with foil. Spray the sides and bottom of the pan with baking spray and set aside.
In a large pot on the stovetop, add the butter to the pot and melt the butter over medium-high heat. Once the butter is melted, add six cups of mini marshmallows to the melted butter. Melt the marshmallows into the butter completely, stirring constantly. Once the marshmallows are completely melted, remove the pot from the stove and turn the stove off.
Immediately add the vanilla extract, salt and white chocolate to the melted marshmallows and stir until well incorporated. Stir in the Strawberry Rice Krispies into the marshmallow mixture, one cup at a time, fully mixing in each cup of cereal before adding the next. At the fourth cup of cereal, add one cup of mini marshmallows and the strawberry jam, and stir into the mixture until combined. Add the remaining two cups of cereal. Add the rest of the mini marshmallows to the treats and stir until incorporated (you want them to stay mostly whole).
Pour marshmallow treats out into prepared pan and sprinkle fruity mini marshmallows on top. Spray one hand with baking spray to GENTLY push the marshmallow treats into an even layer in the pan. Wait until treats have cooled and set before cutting into desired sized squares.
Notes
Can substitute regular Rice Krispies for the strawberry flavored ones, but add 1-1/2 teaspoons strawberry flavor/extract and pink food coloring.
I added some Campfire Fruity Mini Marshmallows on top of my treats for fun! Totally optional…but who doesn’t love a fruity marshmallow?? I used to eat these fruity mini marshmallows by the handful as a kid!
