A sweet vanilla loaf cake full of fresh, diced strawberries. This loaf cake is moist and perfect for using those ripe and juicy strawberries. Add the vanilla cream glaze on top, or just leave it plain. It is delicious both ways!
The main flavor of the loaf cake is vanilla, with the addition of strawberries. So with that being said, using the highest quality vanilla extract is key. I used Rodelle Gourmet Vanilla Extract in this loaf cake!

- 1-1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/8 teaspoon ground nutmeg (optional)
- 1 cup white sugar
- 1 cup vanilla yogurt, room temperature
- 3 eggs, room temperature
- 1-1/2 teaspoons vanilla extract (I used Rodelle Gourmet Vanilla Extract)
- 1/2 cup canola oil
- 1-1/2 cups diced strawberries tossed in 2 tablespoons flour
- VANILLA CREAM ICING:
- 2 tablespoons butter, melted
- 2 cups powdered sugar
- 1-2 tablespoons coffee creamer
- 1 teaspoon vanilla extract (Rodelle Gourmet Vanilla Extract)
Instructions
Preheat oven to 350-degrees and line a loaf pan with foil or parchment paper and spray the bottom and sides with baking spray. Set aside.
In a medium sized bowl, whisk together the flour, baking soda, salt and nutmeg.
In a large bowl, mix together the sugar, yogurt, eggs, vanilla extract and oil. Fold the dry ingredients into the wet ingredients, mixing until combined. Fold in the flour coated diced strawberries.
Pour batter into prepared loaf pan and bake for 55-65 minutes. Bake until a toothpick inserted in the middle comes out without raw batter on it. Remove baked cake from the oven and let cake set in the pan for ten minutes before transferring to a wire rack to finish cooling.
Once cake has cooked, option to top with vanilla icing. In a small bowl, mix together melted butter, powdered sugar, 1-2 tablespoons coffee creamer (or milk) and vanilla extract. Add additional amounts of coffee creamer or powdered sugar to reach desired consistency. Pour glaze over cooled loaf cake and top with sprinkles if desired. Allow glaze to set 1-2 hours before cutting into slices.
Notes
Store loaf cake in an air tight container at room temperature. Cake stays fresh for 4-5 days.
