Strawberry Crumb Bars

These strawberry crumb bars are made up of fresh strawberries in between layers of a sweet, buttery crumb mixture. This is a super easy dessert to whip up and can easily be doubled. And it is also perfect for a summer dessert!

Ingredients

  • CRUMB MIXTURE:
  • 1/2 cup white sugar
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • pinch of nutmeg
  • 1/2 cup unsalted butter, cold and cut into pieces
  • 1 egg
  • 1 teaspoon vanilla extract (I used Rodelle Gourmet Vanilla Extract)
  • STRAWBERRY MIXTURE:
  • 2 cups fresh strawberries, chopped
  • 1/2 cup white sugar (can reduce to 1/3 cup if you want it less sweet)
  • 2 teaspoons cornstarch.

Preheat oven to 375-degrees. Line an 8-inch x 8-inch pan with parchment paper and spray the bottom with baking spray. Set aside. CRUMB MIXTURE: In a large bowl, mix together the sugar, flour, baking powder, salt and nutmeg. Add the pieces of cold butter to the dry ingredients and use two forks or a pastry cutter to cut the butter into the dry ingredients. Work only until the butter is in small pieces; dough will by crumbly.

In a small bowl, mix together the egg and vanilla extract. Add the mixture to the crumb mixture and mix until incorporated. Gently press half of the crumb mixture into the bottom of the prepared pan. Put the pan and bowl with remaining crumb mixture in the refrigerator while you prepare the strawberry layer.

STRAWBERRY LAYER: In a medium sized bowl, mix together the chopped fresh strawberries, sugar and cornstarch. Remove the pan from the refrigerator and add the strawberry layer onto the bottom layer. Sprinkle the remaining crumb mixture over the strawberry layer.

Bake in 375-degree oven for 40-45 minutes. Bars are done when they are lightly golden brown on top. Remove from oven and allow bars to set and cool at room temperature. Once bars have cooled completely, cut into squares. Store bars in the refrigerator.
