Chicken Noodle Soup

Easy chicken noodle soup, made from scratch and on the stovetop, in less than an hour.  Celery, carrots, chicken stock, spices, noodles and an abundance of rotisserie chicken are the ingredients needed in this simple, yet hearty and warming bowl of goodness.  The only real work required when making this is cutting the celery and carrots and removing the meat from the chicken.  15-minutes of prep work and the stove does the rest!

Chicken Noodle Soup

Serves: 10 Cooking Time: 35-minutes

Ingredients

  • 2 cups sliced celery
  • 2 cups sliced baby carrots
  • 2 tablespoons butter
  • 2 (32-ounce) cartons chicken stock
  • 4 cups of water
  • 3 extra large chicken bouillon cubes
  • 2 teaspoons garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 bay leaf
  • 1 (8-ounce) package No Yolks egg noodles
  • 2 rotisserie chickens, meat removed and bones discarded

Instructions

In a large soup pot, over medium heat on the stovetop, add the celery, carrots and butter. Stir occasionally, cooking for 5-10 minutes. Add the chicken stock, water, bouillon cubes, seasonings and bay leaf. Bring soup to a boil. Once soup is at a boil, add in the egg noodles. Cook for 5-10 minutes (or until desired doneness of noodles). Add in cooked chicken and remove the pot from the stove. Remove bay leaf and discard before serving.

Notes

Leftover soup can be frozen for up to six months. Let soup cool completely before placing in a freezer proof ziplock bag and place in the freezer.

    The ultimate comfort food!!! This version with rotisserie chicken looks so easy and healthy Kelly. I’ve never used bullion base before, but sounds like the yummy addition and saves time. I’m gonna pick up next time I hit the grocery store.

    Ok, Kelly I have to be honest, I really love making chicken noodle soup by simmering whole roasting chickens. It’s so affordable and makes the such a flavorful broth. It stems from my restaurant owning days. Whole chickens are cheap so making the stock and then turning it into soup was so delicious but the best part was the profit margarine was very favorable! Your recipe is a great alternative if you don’t like to deal with a whole raw chicken, however. A lot of people don’t so this is perfect. I love those noodles you use! So homey and classic.

      I will definitely have to try your version! I am all about more economic recipes…I have never made a stock from scratch before. Maybe I might be a little intimidated hehehehe. You cook the chicken first, then just add the carcass to water and simmer?

    Love this soup. Isn’t it great when food brings up special memories? I also like that you used the spice bag, that is a great idea. It is definitely getting time for soup. Thank you for the recipe.

      Thanks Amy!! I feel like all I want to eat is soup right now hehehe. Plus this soup is good to freeze too. So I froze half of it and it saved me a few weeks later when I needed dinners for the boys!

    Just looking at that EGG PASTA makes me have flash backs to when I was a kiddo! That was my favorite kind of pasta HANDS DOWN and my dad would always make it when he made pork chops with apple sauce. I never ate the pork, I dont recall at least – just that delicious pasta!

      Hahahah what an awesome memory! I was all about the noodles in this soup when I was a kid. Now I don’t like noodles. WTF?!?! If I made this for me, I would leave out the noodles hahaha.
