This no bake pie starts off with a graham cracker crust and is filled with a homemade chocolate pudding. Top the pie off with marshmallows and toast under the broiler for a few seconds and you have a s’mores pie! And since no campfire is required, you can make this pie all year round!
Yes, yes, yes….there’s homemade chocolate pudding in this pie. But making homemade pudding is really actually very easy! Just follow the recipe and the directions. And while you are whisking the pudding on the stove, there will be a point in the beginning that you will think the mixture will never get thick and turn into pudding. But it does.
I used Rodelle Gourmet Baking Cocoa in my pudding….it is richer and more chocolatey than other cocoa powders and I wanted a rich, chocolate pudding.
This no bake graham cracker crust takes just minutes to mix together. Pop it in the freezer to set while you make your pudding.

- GRAHAM CRACKER CRUST:
- 2 cups graham cracker crumbs
- 3/4 cup unsalted butter, melted
- CHOCOLATE PUDDING:
- 1/2 cup unsweetened cocoa powder (I used Rodelle Gourmet Baking Cocoa)
- 1/4 cup cornstarch
- 3 egg yolks, beaten and at room temperature
- 1-1/2 cups white granulated sugar
- pinch of salt
- 2 cups whole milk, room temperature
- 1-1/2 teaspoons vanilla extract (I used Rodelle Baker's Extract)
- 2 tablespoons butter, room temperature
- MARSHMALLOW TOPPING:
- 2 cups mini marshmallows or regular sized marshmallows
Instructions
GRAHAM CRACKER CRUST: Spray a pie dish with baking spray and set aside. In a medium sized bowl, mix together the graham cracker crumbs and butter. Press the crumbs into the pie dish, covering the sides and bottom of the dish. Place pie dish in freezer to set while you prepare the pudding filling.
CHOCOLATE PUDDING: In a medium sized pot, on the stovetop, use a sturdy metal whisk to whisk together the cocoa, cornstarch, beaten egg yolks, sugar, salt and vanilla extract. Turn the stove top on to medium-high heat and slowly whisk the milk gradually into the pot. Continue whisking the pudding over medium-high heat, until thick. Once cooked, remove the pudding and beat in the butter. Immediately place a piece of plastic wrap over the hot pudding to prevent a skin from forming. Let the pudding cool before pouring into prepared pie crust.
MARSHMALLOW TOPPING: SEE IMPORTANT NOTE BELOW!! Place marshmallows on top of the chocolate pudding and turn broiler on high. Toast marshmallows to desired doneness, approximately 30-60 seconds. Option to add pieces of Hershey's chocolate on top of the toasted marshmallows.
Notes
IMPORTANT NOTE: If your pie dish is glass and is still cold from the freezer, wait to put the pie under the broiler to toast the marshmallows until the pie dish is room temperature. Store pie loosely covered, in the refrigerator.
