Rice Chex , toasted graham cracker crumbs, marshmallows and milk chocolate chips make for the ultimate in s’mores cereal treats! Who needs camping and a campfire to have s’mores?! These are easy treats you can enjoy all year round. But obviously they are especially perfect for Summer time!
S’mores bring back fond memories of camping with my family when I was growing up and my days as a Girl Scout. Oh how I used to love to go camping. And camping always meant a campfire and s’mores of course!! But ever since starting a job where I sometimes have to work in torrential rain, freezing cold temperatures, wind or 100-plus degree heat, I do not care so much for camping anymore. I’m good in the coziness of my house or a hotel…but since my house does not have a fireplace and whatever hotel I stay in probably doesn’t want me starting a campfire in the middle of my hotel room floor, I am improvising in order to have s’mores anytime I want them.
The base of these treats is Rice Chex of course. A cereal that I just like to keep stocked in the pantry because it is so versatile. I eat it plain and dry, with almond milk or make yummy treats with them. And the flavor of the Rice Chex cereal works perfectly with what we do to the graham crackers in these treats!
You only need a few ingredients to get your s’mores on….
But now I am going to take these treats just a little bit further. Instead of just adding pieces of graham cracker to the treats (which you can TOTALLY do instead), I actually crushed the graham crackers up, mixed the crumbs with a little butter and brown sugar and then baked the crumbs for 12-minutes until they were nice and toasty. It is definitely an extra step, BUT SO WORTH IT!!

- GRAHAM CRACKER CRUMB MIXTURE:
- 8 sheets or 1 package graham crackers, crushed into crumbs (approximately 1-1/2 cups crumbs)
- 4 tablespoons unsalted butter, melted
- 2 tablespoons light brown sugar
- CEREAL TREATS:
- 1/2 cup unsalted butter
- 1 (16-ounce) bag mini marshmallows (approximately 8 cups mini marshmallows)
- 1/2 cup white chocolate chips
- 1 teaspoon vanilla extract (I used Rodelle Gourmet Vanilla Extract)
- 1/2 teaspoon salt
- 6 cups Rice Chex cereal
- 1 cup milk chocolate chip
- 1 cup of the baked graham cracker crumbs
- TOPPING:
- 1/4 cup mini marshmallows
- 1/4 cup milk chocolate chips
- remaining baked graham cracker crumbs
Instructions
GRAHAM CRACKER CRUMB MIXTURE: Preheat oven to 350-degrees. Line a cookie sheet with parchment paper. In a small bowl, stir together the graham cracker crumbs, melted butter and brown sugar. Spread the mixture out onto the cookie sheet into a single layer and bake in 350-degree oven for 12-minutes. Remove from oven and set aside.
CEREAL TREATS: Line a 9x13-inch baking dish with foil or parchment paper and spray with baking spray. Sprinkle 1/3 cup of the toasted graham cracker crumbs into the bottom of the pan. Set aside.
Place a large pot on the stovetop and on medium heat, melt the butter. Once butter has melted completely, measure out seven cups of mini marshmallows (you should still have about 1 cup of marshmallows left in the bag---save those for the end!) and add the mini marshmallows to the melted butter. Stir the marshmallows and butter continuously, until all of the marshmallows have completely melted.
Once all the marshmallows have melted, remove the pot from the stovetop and stir in the vanilla extract, white chocolate chips and salt to the marshmallow mixture and stir the chips until they are mostly melted into the mixture. Add the Rice Chex cereal to the marshmallow mixture, one cup at a time, making sure each cup is fully mixed into the marshmallow mixture before adding the next cup. When adding the sixth cup of Rice Chex cereal, add the remaining mini marshmallows from the bag, 1 cup of baked graham cracker crumbs and the chocolate chips into the mixture. Stir until combined. The mini marshmallows added at the end won't melt completely, which makes for a chewy, marshmallow-y treat!
Pour marshmallow mixture out into prepared baking dish and gently use your hands, or rubber scraper, to gently distribute the mixture evenly into the pan. If I use my hands, I will spray my hands with baking spray so my fingers don't stick to the mixture. Sprinkle the remaining graham cracker crumbs, 1/4 cup of milk chocolate chips and mini marshmallows on top.
Let bars sit at room temperature for 1-2 hours to cool completely, before slicing into desired sized slices.
Notes
Store at room temperature in an airtight container.
Verdict? These s’mores are full of warm graham cracker flavor and oooooey marshmallow goodness. The perfect treat to bring to a backyard barbecue!
