What the heck is a Scotchmallow cup?? Well, it is a layer of chocolate, a layer of butterscotch caramel, a layer of marshmallow fluff and then coated in more chocolate. Like a peanut butter cup, but filled with ooey and gooey caramel and marshmallow! This is an easy, three ingredient candy recipe that anyone can make.
Over here in California, See’s Candies is an institution. I like chocolate, but for me to just eat just a plain milk chocolate bar, the only place that makes a milk chocolate bar worthy of that to me, is See’s Candies. See’s Candies makes a ton of different chocolates, truffles, toffees and more, including the Scotchmallow truffles or Scotchmallow hearts they sell for Valentine’s Day. But they are SO EXPENSIVE!
So I made my own. I made 18 LARGE Scotchmallow cups for a total cost of $8. See’s Candies sells one of their Scotchmallow hearts for just about that. So definitely worth the time to make my own! Use any colored or themed cupcake liner to make your cups and add sprinkled on top too!
Semi sweet chocolate chips, marshmallow fluff and creamy caramel are all you need! Oh and cupcake liners!! For the caramel cream I used caramel cream candy from a local baking supply shop. You can also use a thick caramel like Lighthouse Caramel Dip. They sell it is grocery stores and is usually by the produce.
Scotchmallow Cups

- 4 cups semi-sweet chocolate chips, divided
- 2 tablespoons vegetable shortening
- 1 (7-ounce) container marshmallow fluff
- 1 (16-ounce) container caramel dip
Instructions
Line two cupcake tins with 18 cupcake liners. In a small bowl, add 2 cups chocolate chips and one tablespoon shortening and microwave in 15-second intervals until chocolate has completely melted.
Drop one tablespoon of melted chocolate into each cupcake liner, completely covering the bottom of the liner. Add a tablespoon of caramel on top of the chocolate in each cupcake liner. Add a tablespoon of marshmallow fluff on top the caramel in each cupcake liner.
In the same small bowl as before, melt the remaining 2 cups of chocolate chips and tablespoon of shortening in the microwave. Once melted, add a tablespoon of melted chocolate over the marshmallow, completely covering the marshmallow. Let the Scotchmallow cups set at room temperature for 2-hours before removing from the cupcake tins. Store at room temperature in an airtight container.
Notes
Scotchmallow cups stay fresh for 1-2 weeks.
