Happy Weekend! I am so happy to see the sun…the weather has been CRAZY here this week! We got so much rain in the Central Valley. I am not much of a rain person. Or cold weather person. That’s why I live in California. Duh! So I am enjoying the sun being out, even though it’s cold as heck.
How was your week?? I have been busy dealing with health insurance stuff that has been stressing me out. Hopefully a meeting with Human Resources this week will get everything straightened out. I am hoping the doctor will let me go back to work at least part time here soon. But part time means light duty— which means I am not on the streets working patrol— which is where my heart is at. But it’s probably best for me to ease back into it. I have worked so hard the last several months…and work is always the catalyst that sends me spiraling downwards again, so I gotta keep myself in check.
So I have been trying to keep busy here…you know baking, cooking, blogging, binge watching Netflix. I always take a late afternoon break to take Jack for a walk. And our walks this week were super fun…as soon as Jack and I made it about 5-minutes away from the house, it would start pouring down rain on us hahahaha.
But we were both prepared for rain and dressed accordingly 🙂
Super excited to be going to San Francisco next week for the Winter Fancy Food Show thanks to Ashley from Original Cannoli Chips! It should be interesting, as I have never gone to a show like this before. Plus it’s San Francisco, so of course I’m bringing James with me, and we are going to make a nice overnight trip out of it. I was thinking of doing a “Best Bakery or Dessert in San Francisco” post. Yeah? No?? Maybe I just want an excuse to hit up all the bakeries and stuff my face with sugary delights?? Hmmmm. If you have any recommendations, leave me a comment below! I just need to stay away from the Chanel store. And Louis Vuitton. And Gucci. Ahhhhh.
After my last Random Ramblings post, I got an overwhelming response from you guys requesting healthy meals and meal planning. I hope you guys enjoyed my Healthy 2-Ingredient Crockpot Chicken (with meal plans included)! Soon I will be posting the Healthy Broccoli Beef Dish recipe I made, and tonight I am making a Turkey Meatloaf for the boys, which I will share with y’all soon. Let me know if there are any meals you want me to try an health-ify!
I have been snacking on these Spicy Crispy Baked Chickpeas for daaaaaaaays! They stayed pretty crispy for several days, which surprised me. Probably one of my favorite snacks ever. You totally have to make them!
And after all that cooking, I thought I needed to balance it out with some cookies. Baking is my thang! Sometimes the best cookies are the classic ones! So I made Chocolate Chip M&M Pudding Cookies. Three tablespoons of vanilla instant pudding keeps these cookies soft. I made them humongous, because if you know me, then you know my love of huge, under-baked cookies. Recipe coming soon!
Anybody doing anything for the Super Bowl?? Do you guys want some Super Bowl party food recipes?? We aren’t doing anything for the Super Bowl, but I am planning Ethan’s 10th birthday party, which is football themed. So it kind of all works out! Ethan wants coffee cupcakes with mocha buttercream to serve at his party. Mmm hmmm…he has quite the palate for a 9-year old hehehe. I talked him into letting me make my Funfetti cupcakes too, that way hopefully all the kids at the party will be happy. I will probably make some football shaped brownies or Cocoa Krispies treats too. And of course I will share all the recipes with you guys!
And Valentine’s Day is coming up….I was thinking of sharing my Easy 2-Ingredient Peanut Butter Candy. It’s amazing. And Chubby Hubby bars. Either would be perfect to make for that special someone in your life 🙂 Thoughts??
