Pumpkin Spice Life cereal, marshmallows, white chocolate, pumpkin spice and a few other ingredients are all you need for this easy, no-bake marshmallow cereal treat, full of warm pumpkin spices! And this recipe has pumpkin spice in it three different ways!
Yes another cereal treat…but this one is perfect for Fall. And it’s such a quick and easy dessert to make. Because sometimes you need a dessert dish to bring to a party and you need it fast! Well here ya go 🙂 I made these treats to bring into work for my guys to eat during morning briefing. Since these are made out of cereal, it’s totally okay to eat these for breakfast, right?! RIGHT!
I found a box of the limited edition Pumpkin Spice Life cereal at my local grocery store. If you can’t find this cereal, you can just use the regular Life cereal, but add an additional 1/2 teaspoon pumpkin pie spice. I also used pumpkin spice extract from Rodelle. It definitely amps up that pumpkin spice flavor! Pumpkin Spice to the third degree!!
Pumpkin Spice Life Cereal Treats

- 1/2 cup unsalted butter
- 1 (16-ounce) bag mini marshmallows, divided (about 8 cups total)
- 3/4 teaspoons vanilla extract (I used Rodelle Baker's extract)
- 1/2 teaspoon pumpkin spice extract (I used Rodelle)
- 1/4 teaspoon pumpkin pie spice
- 1/3 cup white chocolate chips
- pinch of salt
- 6 cups Life Cereal (I used Pumpkin Spice Life cereal)
- Sprinkles (optional)
Instructions
Line a 9x13-inch baking dish with foil or parchment paper and spray with baking spray. Set aside.
Place a large pot on the stovetop and on medium heat, melt the butter. Once butter has melted completely, measure out seven cups of mini marshmallows (you should still have about 1 cup of marshmallows left in the bag---save those for the end!) and add the mini marshmallows to the melted butter. Stir the marshmallows and butter continuously, until all of the marshmallows have completely melted.
Once all the marshmallows have melted, remove the pot from the stovetop and stir in the vanilla extract, pumpkin spice extract and pumpkin pie spice. Add the white chocolate chips and salt to the marshmallow mixture and stir the chips until they are mostly melted into the mixture. Add the Life cereal to the marshmallow mixture, one cup at a time, making sure each cup is fully mixed into the marshmallow mixture before adding the next cup. When adding the sixth cup of Life cereal, add the remaining mini marshmallows from the bag, into the mixture. Stir until combined. The mini marshmallows added at the end won't melt completely, which makes for a chewy, marshmallow-y treat!
Pour marshmallow mixture out into prepared baking dish and gently use your hands, or rubber scraper, to gently distribute the mixture evenly into the pan. If I use my hands, I will spray my hands with baking spray so my fingers don't stick to the mixture. Sprinkle a light dusting of pumpkin pie spice on top and add sprinkles (if desired).
Let bars sit at room temperature for 1-2 hours to cool completely, before slicing into desired sized slices.
Notes
If using regular Life cereal, add an additional 1/2 teaspoon pumpkin pie spice. Option to sub the pumpkin spice extract for more vanilla extract, but add an additional 1/4 teaspoon of pumpkin pie spice. Store in an airtight container at room temperature.
