Pumpkin Oatmeal Cookie Bars

These oatmeal cookie bars are full of pumpkin flavor from using pumpkin puree, pumpkin pie spice and pumpkin extract.  An easy pumpkin dessert to throw together for any Fall party…or Thanksgiving….or Friendsgiving!

The Pumpkin Spice Extract from Rodelle is every Fall flavor all contained in one bottle.  LOVE!

Pumpkin Oatmeal Cookie Bars

Serves: 24 Cooking Time: 28-minutes

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup canned pumpkin puree
  • 1 cup white sugar
  • 1 cup light brown sugar, packed
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract (I used Rodelle Baker's Extract)
  • 1 teaspoon Rodelle Pumpkin Spice Extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon pumpkin spice
  • 2 cups old fashioned oats
  • 1/2 cup quick cooking oats
  • 2 cups semi-sweet chocolate chips
  • PUMPKIN SPICE-SUGAR TOPPING:
  • 2 tablespoons white sugar
  • 1 teaspoon pumpkin pie spice

Instructions

Preheat oven to 350-degrees and Line a 9x13-inch baking pan with foil. Spray the bottom and sides with baking spray. Set aside.

In the bowl of a stand mixer, affixed with the paddle attachment, cream together the butter, pumpkin puree, brown sugar and white sugar on medium-high speed, until light and fluffy. Mix in the eggs, vanilla extract and pumpkin extract. Scrape down the sides of the bowl as needed.

Change the mixer speed to low and slowly add in the flour, baking soda, baking powder, cornstarch, salt and pumpkin pie spice. Mix in both of the oats and the chocolate chips. Mixing until barely combined.

Remove the bowl from the mixer and dump dough out into prepared pan. TOPPING: in a small bowl, mix together the pumpkin spice and sugar. Spoon topping evenly over cookie bars.

Bake bars in 350-degree oven for 28-minutes or until the edges of the cookies are light brown. Remove from the oven and set on wire rack to cool. Let bars set completely in the pan before removing to cut into squares.

    I never knew pumpkin spice extract is a thing! But I’m so glad it is because these bars sound insanely good!

    These would make great snack for the lunch box or along with a tall glass of milk. After all, ’tis the season for all things Pumpkin spice!

    I’m sorry that you both have to work on Thanksgiving, but thank you for doing that. I am so excited that my family will be here this year, although a little bummed that my married son is on call, so he and his family will not be here. I love your new recipe – I do love pumpkin. And I love your new word too. I like to make up new words and I may have to borrow pumpkinfied from you. That sounds like a word that would fit into my vocabulary!

    I used to love oatmeal cookies – but with ZERO raisins! I know I would ADORE this recipe because um, I love pumpkin TOOOOOO!!!! SAY HELLO to my mouth! 😉
