Fresh off the plane from Boston after trying my first cannoli (and OMG— one of the best things I have EVER eaten!!), I was feeling the inspiration to make something with my stash of Original Cannoli Chips! So today I am bringing you another super easy recipe, no baking required either. Oh and less than five ingredients. Does it get much better than that?! Nope! And this recipe is the perfect example of how my crazy mind works and what happens when I experiment in the kitchen….
Cannoli Chips. Marshmallow Creme. Vanilla extract. Butter. SPRINKLES. Put that all together and what do you get?! These bars. And if they don’t sell Original Cannoli Chips at your local store, you can buy them online and have them shipped directly to your door. Definitely gonna say you need to buy some. Everyone that has eaten Original Cannoli Chips has loved them.
I used two bags of my Original Cannoli Chips Powdered Sugar Cannoli Chips and crushed the chips up in the bag. Some big pieces and some smashed fine. There’s no science to it….I just used my fist to break the chips into pieces. Go ahead and get out any pent up frustration while smashing your chips into pieces…or grab your kids and have them help smash the chips into pieces. It’s always fun breaking stuff!
Powdered Sugar Cannoli Chip Marshmallow Bars

- 1 (7-ounce) container marshmallow creme
- 2 tablespoons butter
- 1 teaspoon Vain Mexican Vanilla extracted in Cane Rum
- 2 (5.1 ounce) bags Original Cannoli Chips Powdered Sugar Cannoli Chips
- Sprinkles (optional)
Instructions
Line a 9x5-inch loaf pan with foil and spray with baking spray. Set aside. In a microwave safe bowl, add the entire container of marshmallow creme and butter. Microwave for 45-50 seconds or until completely melted. Stir the mixture until both the creme and butter are combined, and then stir in the vanilla extract. Stir in the cannoli chip pieces to the marshmallow mixture. Pour mixture out into prepared pan and press mixture evenly into the pan. Top with sprinkles. Place pan in the refrigerator for bars to set and cool. Once the bars are cooled completely, lift the bars out of the pan using the foil, and cut into desired sized squares.
Notes
Store bars in an airtight container in the refrigerator. Bars will stay fresh for 2-3 days.
