Crushed up Powdered Sugar Cannoli Chips are added into this sugar cookie dough, to create a soft, sugar cookie that is rich in cannoli flavor! I was inspired to make this cookie after I made Waffle Cone Cookies and the flavor was AMAZING. So how could I go wrong by crushing up cannoli chips and adding them into a sugar cookie dough?!
If you haven’t tried the Original Cannoli Chips yet, then you are missing out!! Buy a few bags of these chips, but make sure you stash a few extra bags of the Powdered Sugar Cannoli Chips so you can make these cookies. Eating these chips takes me back to when I visited Boston and the amazing Cannoli’s my sister and I ate there…Mmmmmm. Anyways. Back to these cookies!
If I was going to add crushed up cannoli chips into my cookie dough, why not roll my cookie dough balls in more sugar and crushed up cannoli chips?!
This dough ball has a play date in a bowl of cannoli chip crumbs and sugar 🙂

Powdered Sugar Cannoli Chip Cookies

- 1/2 cup unsalted butter, room temperature
- 1/2 cup light brown sugar, packed
- 1/2 cup white granulated sugar
- 1 egg, room temperature
- 2 teaspoons vanilla extract (I used Rodelle Baker's Extract)
- pinch of salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cornstarch
- 1 cup all-purpose flour
- 1-1/2 cups of finely crushed Powdered Sugar Cannoli Chips
- TOPPING:
- 1/4 cup of finely crushed Powdered Sugar Cannoli Chips
- 1/4 cup white granulated sugar
Instructions
In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and beat on medium-high speed until creamy. Add the light brown sugar and white sugar to the butter and beat until light and fluffy. Mix the egg into the butter-sugar mixture completely. Add the vanilla extract to the wet ingredients, and mix until all ingredients are fully incorporated. Scrape down the sides of the bowl as needed.
Change the mixer speed to low, and slowly add the salt, baking soda, cornstarch, flour and cannoli chip crumbs into the wet ingredients. Mix until just combined. Once combined, remove the bowl from the mixer and cover with plastic wrap. Place dough in the refrigerator to chill for at least 2-3 hours.
After dough has chilled, preheat the oven to 350-degrees and line two cookie sheets with parchment paper. Prepare the topping by mixing together the cannoli chip crumbs and white sugar together in a small bowl. Remove the cookie dough from the refrigerator. Use a standard size cookie scoop to scoop cookie dough balls. Roll the cookie dough balls in the topping and place on the cookie sheet. Space the cookie dough balls a few inches apart, to allow slight spreading.
Bake cookies, one cookie sheet at a time, for 10 minutes. Remove cookies from the oven and let cookies set on the cookie sheet for 5-minutes before transferring to a wire rack to finish cooling completely. Option to sprinkle leftover topping on top of cookies as soon as you remove them from the oven.
Notes
Store cookies in an air tight container at room temperature.
Powdered Sugar Cannoli Chips. Buy some. You can buy Cannoli Chips off Amazon, or keep a look out at your local grocery store. I have found them at my local grocery store all the way out here in California! So snag a bag. Eat a few….but make these cookies with them. They are AMAZING!
