Pitted dates, stuffed with a sweet peanut butter mixture and then dipped in chocolate. This is an easy, no-bake snack that is great for a healthier treat or for a fun party snack.
If you have never had a date, they have an almost caramel flavor to them. You definitely have to give them a try! And to make these stuffed dates even easier, you could always skip dipping them in chocolate and just roll them in granulated sugar (or date sugar!). I love the dates and date products from Let’s Date!
Peanut Butter Stuffed Dates
Print RecipeIngredients
- 40 pitted dates
- 3 tablespoons unsalted butter, melted
- 1/3 cup creamy peanut butter
- 3/4 cup fine graham cracker crumbs
- 1/4 cup powdered sugar
- pinch of salt
- 2 cups chocolate chips
- sprinkles
Instructions
Place a large strip of foil or parchment paper on the counter. Take each date and carefully use a knife to slit open the top of the date (do not cut entirely in half) and then place on the foil.
PREPARE THE PEANUT BUTTER MIXTURE: In a medium-sized bowl add the melted butter, peanut butter, graham cracker crumbs, powdered sugar and salt and mix until thoroughly combined.
Add a 1/2 teaspoon of the peanut butter mixture into each date and close the date back up. Once all the dates have been stuffed, melt the chocolate chips in the microwave in 10-second increments, stopping to stir. Once melted, dip each stuffed date into the chocolate, top with sprinkles and then set on the foil to set.
Option to roll the dates in granulated sugar instead of chocolate.
Notes
Store in an airtight container at room temperature.
