Peanut Butter Marshmallow Peeps Blondies

Peanut Butter Blondies are topped with cut up chunks of Peeps for a fun Easter and Spring-themed dessert.  Blondies are a super easy dessert to make and these Peanut Butter Blondies pack a peanut butter punch with the sweet taste of melted Peeps on top.  Can it get any better than the combination of peanut butter and marshmallow??  Well yes….when those marshmallows are in the form of PEEPS!

These bars are so quick to mix up and bake….plus the best part is that you probably already have everything to make these (except maybe a stash of Peeps).

Peanut Butter Marshmallow Peeps Blondies

Serves: 20 Cooking Time: 15-17 minutes

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 egg, room temperature
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1 cup all-purpose flour
  • TOPPING:
  • 30 chopped up Peeps (I used the chicks)

Instructions

Preheat oven to 350-degrees. Line an 8 x 8-inch baking dish with foil and spray with cooking spray. Set aside.

In the bowl of your stand mixer, fitted with the paddle attachment, add the melted butter and brown sugar. Beat on medium-high speed until light and fluffy. Add egg and vanilla extract into the sugar mixture and mix until combined. Add peanut butter and mix on medium-high speed until ingredients are incorporated and thoroughly mixed. On low speed, add the salt and flour to the sugar mixture and mix until just combined.

Pour dough out into prepared pan and spread evenly into the pan. Bake in 350-degree oven for 10-minutes. Remove the blondies from the oven and add an even layer of the Peeps on top. Return the blondies to the oven for 5-7 additional minutes to melt the Peeps on top and finish baking the blondies. If Peeps still haven't melted, turn the broiler to HIGH heat and watch closely until you reach desired meltiness. Remove blondies from the oven and let set and cool completely before cutting into desired sized squares.

Notes

Spray the blade of your knife with baking spray before slicing the peanut butter bars, to a avoid the Peeps getting stuck to the knife.
