Peanut butter and chocolate chip cookie dough, baked in a pie dish, to create one huge peanut butter cookie cake! Need a quick and easy dessert to make? Well here ya go! This is such an easy recipe to whip up for any party, birthday or celebration! Cut yourself a nice thick slice of cookie and then pour yourself a tall glass of milk…because you will need it!
I added three kinds of chocolate to this Peanut Butter Cookie Cake, but really your add-in options are endless! Any chocolate peanut butter candy would be yummy in this cookie cake, or just use all chocolate chips. Whatever you have on hand 🙂 I just happened to have Hershey Kisses, a block of bittersweet chocolate and semi-sweet chocolate chips in my pantry.
It’s great to have easy recipes that take mere minutes to make, and are quick to bake, because sometimes you just need dessert. And you need it NOW! I made this cookie cake for James for his birthday. I picked up a day of overtime and then realized we were celebrating James’ birthday the next day, at a family lunch celebration. So without much time to hit the grocery store, or make some elaborate cake with frosting and all the works, a cookie cake just seemed like a great idea!
You could make frosting, but I just went with adding some raw sugar on top before baking, to give the cookie a nice crunch. Because peanut butter cookies are always rolled in sugar!
Peanut Butter Cookie Cake

- 1/2 cup unsalted butter, room temperature
- 3/4 cup light brown sugar, packed
- 1/4 cup white granulated sugar
- 3/4 cup peanut butter (I used creamy)
- 1 egg + 1 egg yolk, room temperature
- 2 teaspoons vanilla extract (I used Rodelle)
- 1-3/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon cornstarch
- pinch of salt
- 2 cups chocolate chips or chocolate peanut butter candy
- TOPPING:
- 2 tablespoons raw sugar (optional)
Instructions
Preheat oven to 350-degrees. Line the bottom of a 9-inch cake or pie pan with parchment paper. Spray the bottom and sides of the pan with baking spray. Set aside.
In the bowl of you stand mixer, affixed with the paddle attachment, cream together the butter, brown sugar, white sugar and peanut butter. Mix on medium speed until light and fluffy. Scrape down the sides of the bowl as needed. Add the egg and egg yolk and mix until combined. Mix in the vanilla extract.
Change the mixer to low speed and add the flour, baking soda, cornstarch and salt. Mix until barely combined. Remove the bowl from the mixer and fold in your chocolate chips or chocolate peanut butter candy.
Bake cookie cake in 350-degree oven for 16-18 minutes or until the middle is semi-set. You want the cookie cake to be slightly underdone. Remove cookie cake from oven and let set in the pan for 15-20 minutes or until set. Transfer cookie to a wire rack to finish cooling completely.
Notes
Store in an airtight container at room temperature.
This recipe is best baked so it is actually a little underdone. I would have preferred my cookie cake a little ooey-ier and gooey-ier. The cookie cake will continue to bake in the dish even after you remove it from the oven…so just keep that in mind!
My nieces had fun finding the whole Hershey Kisses in their slices of cookie cake. The look on Miss A’s face when she found a Kiss was hysterical!!
