Easy, ooey and gooey, and enough to feed a crowd. Need a quick and easy dessert to make?! Well peanut butter and chocolate are obviously the best combo EVER….so lets make blondies with them! A full 9×13-inch pan of these soft peanut butter chocolate chip cookie-like bars. These will have people oohing and ahhhing. Promise!
Do you ever feel like there just aren’t enough hours in the day or days in the week? Silly question I am sure! Well over the past couple weeks I have been busier than ever and trying to figure out how to fit it all in. Today is my first day off from work after an insanely long work week and three full days of overtime. I have been up since 5am and trying to catch up on all things blogging for the past four hours. And I still have four blog posts to write hahaha. Oh and did I mention that I moved in the midst of it all?? And then rented out my old house, so now I am learning how to be a landlord. This girl needs a break!
Anyways. So I made these blondies because I came to work for my three days of overtime, which was department training for a new paperless records system we are switching to, and on day one I came in empty handed (because I was still moving in the new house!). Well when you bake and have a blog, people expect treats! And all the people I was working with quickly let me know they wanted some of Kelly’s treats 🙂 So after I got off work the first day, I whipped these blondies up quickly while I made dinner for the boys. And in between loads of laundry. And trying to get my workout in. I am a multi-tasking master hehehe.
These blondies were a hit with the crew I was training with. Definitely made overtime a little sweeter hehehe. So if you are looking for a quick and easy dessert to whip up, here ya go. Pin and share y’all! And FYI they may look underdone when you pull them from the oven, but this is what you want. Light brown edges and gooey center. The blondies will set in the pan as they cool (I recommend letting them set overnight).
Peanut Butter Chocolate Chip Blondies

- 1 cup butter, room temperature
- 1 cup peanut butter (I used creamy)
- 2 cups light brown sugar, packed
- 2 eggs, room temperature
- 2 teaspoons vanilla extract (I used Rodelle Bakers Extract)
- pinch of salt
- 2 cups all-purpose flour
- 2 cups semi-sweet chocolate chips
- TOPPING:
- 2 tablespoons raw sugar (optional)
Instructions
Preheat oven to 350-degrees. Line a 9x13-inch baking pan with foil and spray the bottom and sides with baking spray. Set aside.
In the bowl of your stand mixer, affixed with the paddle attachment, cream together the butter, peanut butter and brown sugar on medium-high speed. Mix until light and fluffy. Add the eggs, one at a time into the butter-sugar mixture. Add the vanilla extract and salt. Mix until ingredients are combined, scraping down the sides of the bowl as needed.
Change the mixer to low speed and add in the flour. Mix until barely combined. Remove the bowl from the mixer and fold in the chocolate chips. Spread the cookie dough into the prepared pan. Option to sprinkle raw sugar on top before baking.
Bake bars in 350-degree oven for 20-22 minutes, or until the edges are light brown. Bars may look under done, but they continue to bake as they set. Remove bars from the oven and let set in the pan on the counter for several hours (or overnight) before cutting into squares.
Notes
Store leftovers in an air tight container at room temperature. Bars stay fresh for a week when properly stored.

I can’t believe that you moved in the middle of all of this and that you are now a landlord. We have done that and it can be a headache. Hopefully you have good renters because that makes all of the difference. I still say that you have spoiled your coworkers. They better be really good to you!!!
