A sweet cream cheese based filling, full of fresh papaya, all on top of a sweet cookie crust. A no-bake freezer pie that is creamy and takes just minutes to make! Fruity and tropical, this pie is a fun way to use fresh papayas.
I had some gorgeous Strawberry Papayas sent to me from Melissa’s Produce that I needed to use ASAP. On a whim I whipped up this pie, hoping it would actually come together and work! And it did!!
Familiar with papaya? If not, scoop out the seeds with a spoon and then use the spoon to scrape out the orange goodness (kind of like scooping out an avocado). Run a knife through the papaya until you get your desired sized chunks of papaya and then place the papaya in cheese cloth, a clean dish towel or paper towels, to get rid of excess juice.
For my cookie crust I used Bakeology Vanilla Chai cookie bites crushed into fine crumbs. So my pie is actually also GLUTEN FREE! You can use graham cracker crumbs or crushed up sugar cookies for your crust too.
This is a great recipe to make ahead of any party…because you get to store it in the freezer. And what better way to celebrate Pi Day than with a pie recipe?! Pi Day = 3.14 aka: March 14th. Pi Day is a big day for mathematicians and food bloggers. Hahahaha. Everyone else is like whaaaaaat??? But go with it and celebrate with this pie!
Papaya Cream Freezer Pie

- COOKIE CRUST:
- 2 cups fine cookie crumbs (I used Bakeology Vanilla Chaie Cookie Bites)
- 1/4 cup + 2 tablespoons butter, melted
- PAPAYA PIE FILLING:
- 8-ounces cream cheese, room temperature
- 1 (14-ounce can) sweetened condensed milk
- 1 cup powdered sugar
- 2 tablespoons milk (I used almond milk)
- 1 teaspoon vanilla extract
- 1/2-1 cup finely cut papaya, drained in cheese cloth
Instructions
CRUST: spray a pie plate with baking spray and set aside. In a bowl, combine the cookie crumbs with the melted butter. Dump mixture into prepared pie plate and use the back of a spoon or bottom of a glass to firmly press the mixture into the pie plate. Put crust in the freezer to set as you make the filling.
PAPAYA PIE FILLING: In the bowl of your stand mixer affixed with the paddle attachment, add the cream cheese and beat until smooth and creamy. Scrape down the sides of the bowl and add the sweetened condensed milk, powdered sugar, milk and vanilla extract. Mix until combined and smooth. Fold in the drained papaya.
Pour mixture onto cookie crust and place in the refrigerator for 1-hour. After one hour, cover the pie plate with plastic wrap and place in the freezer to set completely.
Notes
Store pie in the freezer. When ready to eat, remove 5-minutes prior.
I added a sprinkling of powdered sugar on top of my pie…
