Oatmeal Cookies

This oatmeal cookie recipe is full of two kinds of oats and has a sweet cinnamon flavor. The addition of date syrup to the cookie dough adds a rich flavor to the cookies. Don’t have date syrup? Use mild molasses instead!

I used date syrup from D’vash and was surprised at how rich and sweet the syrup was! Who would have thought?! Definitely give it a try.

Ingredients

  • 6 tablespoons unsalted butter, room temperature
  • 1/2 cup light brown sugar, packed
  • 1/2 cup white granulated sugar
  • 1 egg, room temperature
  • 2 tablespoons date syrup (or mild molasses)
  • 1 teaspoon vanilla extract (I used Rodelle Baker's Extract)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • pinch of ground nutmeg
  • 1 cup old fashioned oats
  • 1/2 cup quick cooking oats
  • CINNAMON-SUGAR TOPPING:
  • 1/4 cup white granulated sugar
  • 1/2 teaspoon cinnamon

Instructions

1

In the bowl of a stand mixer, affixed with the paddle attachment, cream together the butter, brown sugar and white sugar on medium-high speed, until light and fluffy. Mix in the egg, date syrup and vanilla extract. Scrape down the sides of the bowl as needed.

2

Change the mixer speed to low and slowly add in the flour, baking soda, baking powder, cornstarch, salt, cinnamon and nutmeg. Mix in both of the oats. Mixing until barely combined.

3

Remove the bowl from the mixer and dump the cookie dough onto plastic wrap and refrigerate for 3-4 hours, or overnight.

4

Once the cookie dough has chilled, preheat oven to 350-degrees and line three cookie sheets with parchment paper. Set aside.

5

Mix the cinnamon sugar topping in a small bowl. Use a standard sized cookie scoop (approximately 2 tablespoons) to scoop cookie dough balls, roll in the cinnamon sugar topping and drop onto the prepared cookie sheets.

6

Bake cookies, one cookie sheet at a time, in 350-degree oven for 8-minutes or until the edges of the cookies are light brown. Remove baked cookies from the oven and let rest on the cookie sheet for several minutes before transferring to a wire rack to finish cooling completely.

Notes

Store cookies in an airtight container at room temperature. Cookies stay fresh for several days.
