Oatmeal Banana Bread made using three ripe bananas and old-fashioned oats. This is an easy recipe, made in one bowl, in just minutes!

- 1/2 cup vegetable or canola oil
- 3/4 cup white granulated sugar
- 1/4 cup light brown sugar, firmly packed
- 2 eggs, room temperature
- 3 ripe bananas, mashed
- 2 teaspoons vanilla extract (I used Rodelle Baker's Extract)
- 1/4 cup vanilla greek yogurt, room temperature
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg (or substitute cinnamon)
- 1-1/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup old-fashioned oats (plus 1-1/2 tablespoons for topping)
Instructions
Preheat oven to 350-degrees. Line an 8-inch x 5-inch loaf pan with foil and spray the bottom and sides with baking spray. Set aside.
In a large bowl, whisk together the oil, sugars and eggs. Mix in the ripe, mashed bananas, vanilla extract, greek yogurt, salt and nutmeg. Mix until combined.
Stir in the flour, baking soda and baking powder. Fold in the oats. Pour batter into prepared loaf pan. Top with a sprinkle of oats.
Bake in 350-degree oven for 50-60 minutes, or until a toothpick inserted in the middle comes out without raw batter on it. Remove baked banana bread from the oven and allow to set in pan for 30-minutes, before lifting the banana bread out of the pan by pulling on the foil and allow banana bread to cool completely before slicing.
Notes
Store in an airtight container at room temperature.
