Muddy Buddies….Puppy Chow. Whatever you want to call this yummy snack is fine by me! Muddy Buddies are Rice Chex cereal, coated in butter, peanut butter, melted chocolate chips and tossed in a substantial layer of powdered sugar. I love this classic recipe, partly because it uses the ENTIRE box of Rice Chex, and it makes a ton. This is the perfect no bake snack that you can whip up in mere minutes, and bring it with you on a road trip, a hike, a picnic, etc for the whole family to snack on. But maybe just don’t forget to bring napkins too though, k?
If you have never had Muddy Buddies before, or have only had the store bought ones, then you DEFINITELY need to make these. Muddy Buddies are so easy to make and cost a fraction of the price than buying them already made at the store. And when you make these yourself, you can throw in some yummy add-in’s like I did with My Favorite Indulgence Chocolate Mocha Granola! I thought the crunchiness of the granola would play well with the chocolate-peanut butter coated Rice Chex, and well, become buddies. And they are definitely BFF’s now.
Just make sure you use the largest bowl you have in your kitchen to pour the box of Rice Chex into. You need some room in the bowl to stir in all the yumminess to coat the Rice Chex evenly.
Muddy Buddies with Chocolate Mocha Granola
Print RecipeIngredients
- 1 (12-ounce) box original Rice Chex cereal
- 1/2 cup unsalted butter
- 3/4 cup creamy peanut butter
- 2 cups semi-sweet chocolate chips
- 2 teaspoons vanilla extract (I used Ballard Extracts Chocolate Extract)
- 3-1/2 cups powdered sugar
- 1 (10-ounce) package My Favorite Indulgence Chocolate Mocha Granola (optional)
Instructions
In an extra large bowl, empty the entire box of Rice Chex. Set aside.
In a microwave safe bowl, add the butter, peanut butter and chocolate chips. Microwave in 20-second increments, stopping to stir the mixture each time. Microwave until all the ingredients have fully melted together (approximately 90-120 seconds). Remove the bowl from the microwave and stir in the vanilla extract into the peanut butter-chocolate mixture.
Pour the melted chocolate mixture over the Rice Chex, stirring the mixture gently as you pour, to ensure the chocolate-peanut butter coats all the pieces of Rice Chex. Continue this method until you have poured the entire chocolate-peanut butter mixture over the cereal.
Sprinkle one cup of powdered sugar over the chocolate coated cereal, stirring to coat the cereal. Continue adding the powder sugar, one cup at a time, to the coated cereal, stirring to ensure the cereal is coated in a heavy amount of powdered sugar.
If adding granola, stir in the entire package of granola into the Muddy Buddies. Some pieces of granola will get covered with powdered sugar and some pieces won't.
Let Muddy Buddies cool completely before storing.
Notes
Store Muddy Buddies in an airtight container at room temperature (I use two large Ziplock bags).
The granola added a crunchier texture and the flavor of the Chocolate Mocha Granola has a hint of cinnamon too. See the clumps of cereal?? Totally ok! The clumps are the best part 🙂
Muddy Buddies are the perfect treat to put out in a large bowl at parties, at the pool, late night snacking…I mean peanut butter and chocolate….come on!! My Favorite Indulgence Chocolate Mocha Granola was the perfect addition to my Muddy Buddies, but you can leave yours plain, add M&M’s, marshmallows, nuts or whatever you want to throw in there!
