One bowl, 5-minutes and a few ingredients (that you probably already have in your pantry) are all you need to make these easy, from-scratch Mint Chip Brownies! These are fudgy and full of chocolate-mint flavor. Because sometimes you just need chocolate. And brownies. And these babies can be made in under 30-minutes!
It seems like it has been FOREVER since I have made brownies! Not sure why, because they are so easy. And they make the house smell amazing as they bake. These brownies were a special request by Ethan, who loves everything chocolate and mint. And I have to agree. It’s such a great combo.
When I was in middle school I remember walking home from school and stopping by the store to buy a pint of mint chocolate chip ice cream. Then promptly walking home to eat the whole pint. Ahhhhh….to be a kid and to have that metabolism again. Hehehe.
So you probably have all the ingredients needed to make these brownies…I used the luxurious Rodelle Organic Baking Cocoa in my brownies. I love this cocoa powder!!
You ready to bake some brownies?! Just make sure you grab some peppermint extract and mint chips at the store first.

Mint Chip Brownies

- 10 tablespoons unsalted butter
- 1-1/3 cup white granulated sugar
- 3/4 cup + 2 tablespoons cocoa powder (I used Rodelle organic baking cocoa)
- pinch of salt
- 1 teaspoon vanilla extract (I used Rodelle Baker's Extract)
- 1 teaspoon peppermint extract
- 2 eggs, cold
- 1/2 cup all-purpose flour
- 1 cup mint chips
Instructions
Preheat oven to 325-degrees. Line an 8x8-inch baking pan with parchment paper and spray with baking spray. Set aside.
In a microwave safe bowl, add the butter, sugar, cocoa powder and salt. Microwave in 30-second intervals, stopping to stir the mixture every 30-seconds. Microwave the mixture until the mixture is fairly smooth and hot to the touch (approximately 1-1/2 to 2-1/2 minutes in the microwave).
Remove the bowl from the microwave and set the bowl aside for several minutes, to allow the mixture to cool so it is only warm to the touch. The mixture will look gritty. After mixture has cooled for several minutes, use a wooden spoon to stir in the vanilla extract and peppermint extract. Add the eggs one at a time to the mixture, vigorously stirring each egg into the mixture. Stir the flour into the mixture until the flour is fully incorporated into the batter. Beat the batter vigorously for 40 strokes. Fold in the mint chips. Spread brownie batter into prepared pan.
Bake brownies on bottom rack in 325-degree oven for 20-25 minutes. Brownies are done when a toothpick inserted into the middle comes out without raw batter on it. My brownies took 23-minutes to bake.
Remove brownies from the oven and let set in the pan to cool completely before slicing into desired sized squares.
Notes
Store leftovers in an airtight container at room temperature.

June 7, 2018 at 10:05 PMChocolate and mint are fantastic together. I envy you managing to eat a whole pint of mint chocolate chip ice cream when you were in middle school. Having 3 older brothers at home, I would have never gotten away with that – maybe if I had had a store within walking distance I could have made it happen, but the nearest little store was 8 miles away and I had to ride the bus to school. Man, this sounds like one of those stories where I had to walk uphill to and from school in a snow storm every day doesn’t it!?! Anyway, I do like to make brownies from scratch but often when I am in a hurry I use a box. My favorite after school treat as a kid was cooked frosting. I wrote a blog post about it and I can’t believe it now, but my siblings and I would cook up a batch of frosting and eat it just like pudding. The reason that we made cooked frosting is because the ingredients were pretty much always available. My mother didn’t keep powdered sugar on hand or we probably would have made frosting that we didn’t have to cook. Your brownies look so good. I like the green mint chips in them.

January 13, 2024 at 3:34 PMWe baked the brownies for an hour and there is still uncooked batter in the middle. Is there a typo in the amount of flour and should it be 1 1/2 cups instead of just 1/2 cup flour?

January 13, 2024 at 4:20 PMNo. It is 1/2 cup of flour. There must be something wrong with your oven. The longest these should take to bake is 30-minutes. It does depend on whether your pan is glass, metal, etc. But they should not take an hour and still be uncooked in the middle.
