Maple Nut Butterscotch Cookies

Classic chocolate chip cookie dough recipe, but instead of chocolate chips, butterscotch chips are added instead.  Maple extract is added to the cookie dough to give the cookies a maple flavor that pairs perfectly with the butterscotch and nuts.

In this recipe, use whatever nuts you want…walnuts, pecan, etc.  Or if there’s a nut allergy (or you just aren’t nuts about nuts), then leave em out!

Maple Nut Butterscotch Cookies

Serves: 4 dozen cookies Cooking Time: 9-11 minutes

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1-1/3 cup light brown sugar, packed
  • 1/2 cup white granulated sugar
  • 4 egg yolks, room temperature
  • 1/2 teaspoon vanilla extract (I used Rodelle)
  • 1-1/2 teaspoons maple extract
  • 1/2 teaspoon salt
  • 2-2/3 cup all-purpose flour
  • 1 teaspoon baking soda
  • 3 teaspoons cornstarch
  • 1 cup chopped nuts (I used a mix of pecans and walnuts)
  • 1 cup butterscotch chips

Instructions

Preheat oven to 350-degrees and line four baking sheets with parchment paper and set aside.

In the bowl of a stand mixer, affixed with the paddle attachment, add the butter, brown sugar and white sugar. Mix on medium-high speed until light and fluffy. Add the egg yolks one at a time to the mixer and mix until incorporated. Add the vanilla extract and maple extract and mix until incorporated.

Change the mixer to low speed and add in the salt, flour, baking soda and cornstarch. Mix until barely combined. Remove the bowl from the mixer and use a rubber scraper to ensure all the ingredients are fully incorporated. Fold in the nuts and butterscotch chips.

Use a standard sized cookie scoop to scoop cookie dough balls onto the prepared baking sheets.

Bake one cookie sheet at a time in a 350-degree oven for 9-11 minutes or until the center is set and the edges are a golden brown. Repeat process with remaining baking sheets. Allow cookies to set and cool on the cookie sheet for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature. Cookies stay fresh for 7-10 days.
