Maple No Bake Oatmeal Cookies

Maple no bake oatmeal cookies….like the classic no bake cookies, but there’s no chocolate in these!  Instead we have maple syrup AND maple extract as the main flavors in these no bake oatmeal cookies.  The perfect cookie to whip up quickly on the stovetop.

Maple No Bake Oatmeal Cookies

Serves: 20-30 Cooking Time: 2-minutes

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup pure maple syrup
  • 1/2 cup white sugar
  • 1/4 cup evaporated milk
  • 3 teaspoons maple extract
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/2 cup white chocolate chips
  • 3 cups quick cooking oats

Instructions

In a medium sized pot over medium heat on the stovetop, add the butter, maple syrup, sugar and milk. Stir the mixture regularly until the mixture reaches a boil. Continue stirring and let the mixture boil for 2-minutes and then remove from the stovetop.

Stir in the maple extract, salt, peanut butter, and white chocolate chips into the hot mixture. Stir until the ingredients are fully incorporated. Stir in the oats.

Place a long strip of foil on the counter top and use your desired size cookie scoop to scoop cookies onto the foil. You can use your fingers to shape the cookies into flatter circles. Let cookies cool and set completely before storing in an airtight container.

I just so happened to have a bag of French Toast Crunch cereal in the pantry, so I topped my cookies with a few pieces of the cereal.
