Key Lime Sugar Cookies

Key Lime juice and Key Lime zest are used to flavor these soft sugar cookies.  Key Limes have a tarter and more floral flavor than a regular lime and their flavor lends well to these simple sugar cookies.  If you are a fan of tart desserts and limes, then these cookies are for you!

After you chill your cookie dough, you are going to roll your cookie dough balls in sugar before you pop them in the oven!

Key Lime Sugar Cookies

Serves: 14 Cooking Time: 10-12 minutes

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1-1/2 cups white granulated sugar
  • 1 egg, room temperature
  • 1 teaspoon lime extract
  • zest of 3 Key Limes (heaping 1/2 teaspoon)
  • pinch of salt
  • 2 teaspoons water
  • 2-1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1 tablespoon Key Lime juice
  • SUGAR TOPPING:
  • 1/4 cup white granulated sugar

Instructions

In the bowl of your stand mixer, affixed with the paddle attachment, add the butter. Beat the butter on medium-high speed until light and creamy. Add the sugar to butter and beat until light and fluffy. Add the egg to the butter-sugar mixture and beat until incorporated. Add the lime extract, lime zest, salt and water to the wet ingredients and mix until well incorporated.

Change the mixer to low speed and slowly add the flour, baking powder and cornstarch. Mix until just incorporated. Add the lime juice to the dough and mix until all ingredients are thoroughly incorporated.

Remove the bowl from the mixer and dump the dough out onto a piece of plastic wrap. Cover the dough in the plastic wrap and place in the freezer for 30-minutes (or in the refrigerator if you want to wait a few hours to bake the cookies).

Once the dough has chilled, preheat the oven to 350-degrees and line a baking sheet with parchment paper.

Place the granulated sugar in a small bowl and scoop medium sized cookie dough balls. Drop the cookie dough balls, one at a time, into the bowl of sugar, rolling the cookie dough balls in the sugar, covering them completely with sugar.

Place sugar covered cookie dough balls a few inches apart, on the prepared baking sheet.

Bake in 350-degree oven for 10-12 minutes. Remove baked cookies from the oven and let set on the cookie sheet for several minutes before transferring to a wire rack to finish cooling.

    Key Lime anything is probably my favorite in the whole world. I’m in the final weeks of a hectic tax season and I wish that you lived closer and I would pay you to bake me up a batch of these as I do not have time for baking right now! I guess that I have something to look forward after April 15th! Thank you for sharing this recipe. I’m sure that it will be a keeper for me.

    Was so excited to make these! I got everything together and followed the recipe EXACTLY as it said… did my first batch, they looked amazing. Bit in to try it and got a mouth full of raw dough.. so I popped them back in.. still raw.. trying everything I could with the next couple of batches they still came out undercooked. Ended up throwing them in the garbage out of frustration. Very cool concept but recipe needs some work.

      I am sorry that these cookies did not work for you! I have made them several times and have never had that issue. I do tend to under bake my cookies slightly because I like that super soft center. The cookies do set overnight though and will last for several days while staying super soft. If you eat them straight from the oven then yes, they will be underdone in the middle. If you like your cookies more baked, then make smaller cookies and bake for longer (until the edges are light brown and the center does not appear underdone).
