Keto Flourless Chocolate Cookie Cups

Flourless chocolate cookies were so easy to make Keto, I just couldn’t resist making these cookies after having leftover egg whites from a different recipe I had just made.  Not Keto??  No worries….just use regular powdered sugar!  These cookies are an indulgent treat that are friendly to your waistline though….no fat!!  Cocoa powder, egg whites and powdered sugar (plus a few other ingredients) are the basics in this cookie recipe.

These are the ingredients I used to make my cookies.  Rodelle Gormet Baking Cocoa has a richer, deeper chocolate flavor and the Rodelle Vanilla Bean Paste gives the cookies a nice vanilla flavor that doesn’t disappear after baking.  I love using Swerve sugar replacement in these kinds of recipes, because Swerve does not have any weird after taste or side affects.  Plus it’s a simple cup for cup swap with regular sugar!

So this flourless chocolate cookie cup recipe actually started out as cookies.  See?  They looked fine before I put them in the oven…

But for the life of me, I could not make these cookies keep their shape during baking, and ended up with chocolate puddles every time.  But delicious chocolate puddles.  So to fix it, I turned them into cookie cups!  I prefer thicker cookies over thin cookies anyways 🙂  By baking them in cupcake liners, there’s no other option than thick cookie cups (aka: no flat puddles of cookies).

Keto Flourless Chocolate Cookie Cups

Serves: 9 Cookie Cups Cooking Time: 12-14 minutes

Ingredients

  • 3 cups Swerve powdered sugar (or use regular powdered sugar)
  • 3/4 cup unsweetened cocoa powder (I used Rodelle Gourmet Cocoa Powder)
  • 1 tablespoon cornstarch
  • pinch salt
  • 3 egg whites
  • 2 teaspoons vanilla extract or vanilla bean paste (I used Rodelle Vanilla Bean Paste)
  • 1 teaspoon butter extract (optional)
  • 2 tablespoons chocolate sprinkles (optional)

Instructions

Preheat oven to 350 degrees. Line a cupcake tine with 9 cupcake liners and set aside.

In a large bowl, mix together the sugar, cocoa powder, cornstarch, salt, egg whites, vanilla bean paste, butter extract and chocolate sprinkles. Mixture will be sticky.

Use a standard sized cookie scoop to scoop batter into cupcake liners, filling 2/3 full of batter. Bake in 350-degree oven for 12-14 minutes. Remove from oven and let set for several minutes in the cupcake tin before transferring to a wire rack to finish cooling completely.

Notes

Store at room temperature in an airtight container.

So these might not be the prettiest cookies, but because they were so yummy, I still had to share the recipe with you.  The sprinkles on top were my attempt at trying to make these pretty hahaha #fail.

I shared these cookies with my sister and brother-in-law, because my brother-in-law is always looking for healthier treats and Wendy just happened to stop by my house right after I was done making these.  Wendy texted me later to say that both her and Aaron loved these!!  I know I will make these cookies again because they are THAT good!  And guilt free!!
