Keto-friendly chocolate chunk muffins, made easily using just a few pantry staples, including my favorite sugar substitute and sugar-free chocolate chunks!
The Keto diet is so popular now-a-days, so I have to make sure I am keeping my Keto people happy and not leaving them out on yummy treats! Often times whatever I make for the blog endS up coming to work with me and my sergeant so kindly reminded me it had been awhile since I had made anything Keto for him. So when I made Chocolate Chip Muffins for briefing, I made these Keto Chocolate Chunk Muffins just for him!
To keep these Keto, I used my favorite sugar-free sweetener….SWERVE! If you have never tried Swerve before, you HAVE to get their brown sugar. And then open the bag. And inhale. Smells so good! I seriously can’t believe it’s sugar-free!
This recipe only makes five muffins….if you want more than five, just double the recipe!
Keto Chocolate Chunk Muffins

- 1 cup almond flour
- 2 tablespoons sugar-free granular sugar (I used Swerve)
- 3 tablespoons sugar-free brown sugar (I used Swerve)
- 1/2 tablespoon baking powder
- 1/8 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 5 tablespoons heavy cream
- 1 egg
- 1-1/2 teaspoons vanilla extract
- 1/3 cup sugar-free chocolate chunks (I used Lily's chocolate)
Instructions
Preheat oven to 400-degrees. Line a cupcake tin with five cupcake liners and spray the liners with baking spray.
In a medium sized bowl, mix together the almond flour, sugars, baking powder, salt, nutmeg and chocolate chunks. In a small bowl, mix together the heavy cream, egg and vanilla extract. Add the wet ingredients into the dry ingredients and stir until combined.
Fill cupcake liners to the top with batter and bake in 400-degree oven for 5-minutes. After 5-minutes, keep the muffins in the oven, but reduce the oven temperature to 350-degrees and continue baking for another 18-20 minutes, or until a toothpick inserted in the middle comes out without raw batter on it.
Remove muffins from pan and let cool on a wire rack.
I used Lily’s sugar free chocolate in these muffins….I just cut up chunks of chocolate from a Lily’s Dark Chocolate Bar.
