Hot Cocoa Marshmallows

Homemade marshmallows made with hot cocoa mix and chocolate extract and dusted in a hot cocoa, cocoa powder and powdered sugar mix.  Because what better marshmallow to go with hot cocoa, than one made with hot cocoa mix in it?!

I know what you are thinking….homemade marshmallows??  Isn’t that hard to make????  No.  The answer is NO.  The whole process is really quite easy and once you make your first batch of homemade marshmallows, you won’t be able to stop.  Because unlike the marshmallows you buy at the store, these fresh, homemade ones are perfect for eating all on their own.  No graham crackers or chocolate required!  They are seriously nothing short of amazing.

I decided to take inspiration from the hot cocoa we put our marshmallows in and instead, make hot cocoa-flavored marshmallows!  With just a little bit of dry hot cocoa mx added to the marshmallows while they are mixing up and getting fluffy in the stand mixer, you get this amazing hot cocoa flavor!  And to amp up the chocolate flavor, I also used chocolate extract from Rodelle.

Make these marshmallows the day before you need them, to allow them to set for several hours before cutting into squares and rolling into the hot cocoa, cocoa powder, powder sugar mixture.

Hot Cocoa Marshmallows

Ingredients

  • HOT COCOA-POWDERED SUGAR MIXTURE:
  • 1/2 cup powdered sugar
  • 2 tablespoons hot cocoa mix
  • 1 tablespoon cocoa powder
  • 1 teaspoon cornstarch
  • MARSHMALLOWS:
  • 3 envelopes (1/4 ounce each) unflavored gelatin
  • 1 cup cool water, divided
  • 1-1/2 cups white granulated sugar
  • 1 cup light corn syrup
  • pinch of salt
  • 1/4 cup hot cocoa mix-dry (I used Rodelle)
  • 1/2 tablespoon chocolate extract (I used Rodelle)
  • 1/2 tablespoon vanilla extract (I used Rodelle Gourmet Pure Vanilla Extract)

Instructions

HOT COCOA-POWDERED SUGAR MIXTURE: Place a sifter over a medium sized bowl. Add the powdered sugar, hot cocoa mix, cocoa powder and cornstarch and sift together. Set aside.

MARSHMALLOWS: Brush a 9-inch x 13-inch glass baking pan with oil. Sprinkle some of the hot cocoa-powdered sugar mixture evenly over the oil (this will prevent the marshmallows from sticking to the bottom of the pan and make it easier to cut them).

In the bowl of a stand mixer, affixed with the whisk attachment, add 1/2 cup cool water and three envelopes of gelatin. Mix until ingredients are combined.

In a medium sized pot, on the stove top over medium heat, add the sugar, corn syrup, salt and 1/2 cup water. Stir ingredients until the sugar has dissolved. Change the heat to high and cook the mixture, WITHOUT STIRRING, until the mixture reaches 240-degrees (Fahrenheit) on a candy thermometer.

Remove the pot from the stove and set the stand mixer to low speed and slowly pour the sugar mixture into the softened gelatin. Increase the speed to high and whip the mixture. 5-minutes into mixing, stop the mixer and add the hot cocoa mix, chocolate extract and vanilla extract. Continue mixing on high until the mixture is lukewarm and thick and fluffy. Process may take 3-10 minutes of whipping.

Pour marshmallow mixture into prepared pan, in an even layer. Sprinkle some of the hot cocoa mix-powdered sugar mix over the top of the marshmallows. Save leftover sugar mixture to roll the cut marshmallows into. Let marshmallows set for several hours, or overnight, before cutting.

To cut marshmallows, grease a sharp knife, and cut into desired sized squares. Roll cut marshmallows in the hot cocoa mix-powdered sugar.

Notes

Store marshmallows in an airtight container at room temperature. Use waxed paper to wrap individual marshmallows, or to separate layers of marshmallows. Marshmallows stay fresh for 2-3 weeks.

After you cut your marshmallows into squares, roll them into the the hot cocoa-powdered sugar mixture.  This cuts down on the stickiness on the outside!

Soft and fluffy, with that dying-to-sink-your-teeth-into texture that is full of warm hot cocoa flavor!

    Kelly, these marshmallows look so light and fluffy I could just grab one (or 3) right off that plate! Omg, so tempting! I love that they are easy, since I’ve never made homemade marshmallows.

      Thanks Laura! You definitely need to give homemade marshmallows a try! They taste completely different than store bought! Good enough to just eat alone!!
