Homemade, no boil lasagna, made with a marinara and ground meat sauce, layered between dry lasagna noodles, ricotta cheese, cottage cheese and mozzarella cheese. A super easy, homemade lasagna recipe that takes only minutes to make. Β
This lasagna recipe is a spin off of the recipe my mom has been making our family for years. The “no boil” refers to the fact that you don’t have to boil the lasagna noodles before assembling the lasagna and baking. Β This is a great meal that can be made ahead of time and baked later, and also a recipe that will feed a crowd.
I am including step by step pictures of the lasagna layering process too. Β No matter how many times I make this lasagna, I still have to read the directions from mom, on the order the layers go.
Here are the ingredients you need. Β You can use ricotta or cottage cheese (or a mixture of both) in this lasagna. The moisture of the cottage or ricotta cheese on top of the noodles, soften the noodles when baking.
There is the option of assembling this in the morning before work, putting it in the refrigerator and then baking right before dinner time. NOTE: if using a glass baking dish, do not put cold baking dish in hot oven. It may explode.
First layer: marinara meat sauce
Second layer: dry lasagna noodles
Third layer: ricotta or cottage cheese
Fourth layer: shredded mozzarella cheese
Fifth Layer: (repeat layers one through four again) marinara meat sauce
Sixth and seventh layers: dry lasagna noodles and ricotta or cottage cheese
Final layers: add a layer of mozzarella cheese on top of the cottage cheese, the rest of the marinara meat sauce and sprinkle the top of the lasagna with more mozzarella cheese.
No Boil Lasagna

- MEAT MIXTURE:
- 2-1/2 lbs. ground meat (I used a 70/30 ground beef blend)
- 2 teaspoons Italian seasoning blend
- 1 teaspoon seasoning salt
- pinch of salt
- pinch of dried ground sage
- pinch of dried thyme
- MARINARA:
- 1 jar (23.5-ounces) marinara sauce
- 1 can (6-ounces) tomato paste
- 1 can (14.5-ounces) S&W tomatoes diced with garlic, oregano and basil
- 1 teaspoon salt
- 1 teaspoon Italian seasoning blend
- pinch of dried ground sage
- pinch of dried thyme
- LAYERS:
- 1-1/2 pounds Mozzarella or Monterey Jack cheese, shredded
- 1 container (16-ounces) small curd cottage cheese or 1 (14-ounce) container of ricotta cheese
- 1 small package of lasagne noodles
Instructions
Preheat oven to 375-degrees.
PREPARE MEAT MIXTURE: In a large skillet, over medium-high heat on the stove top, add the ground meat. Stir and break the ground meat into pieces, as the meat browns. Add two teaspoons of Italian seasoning blend, salt, seasoning salt (I use a garlic seasoning salt), sage and thyme to the pan with the meat. Once the meat has browned (it's okay if it isn't cooked all the way through), drain all of the oil from the pan. Leave the browned meat in the pan and return the pan to the stove.
MARINARA: On medium-high heat, add the entire jar of marinara sauce, tomato paste, diced tomatoes, salt, Italian seasoning, sage and thyme to the pan with the browned ground meat. Stir the ingredients until incorporated. Cook the mixture, stirring occasionally, just until the marinara-meat sauce comes to a simmer. Remove pan from the stove.
LAYER THE LASAGNA: In a 9x13-inch baking pan, add a thin layer of the marinara-meat sauce to the bottom of the dish, covering it. Layer uncooked (dry) lasagna noodles over the sauce. Use a spoon to generously cover the dry lasagna noodles with a layer of cottage cheese or ricotta cheese. Sprinkle a layer of mozzarella cheese over the noodles. Repeat process, adding a second layer: sauce, dry noodles, cottage cheese, mozzarella cheese. Add the rest of the marinara sauce to cover the second layer. Sprinkle the top with additional mozzarella cheese.
BAKE: Cover the lasagna with foil and bake in 375-degree oven for 50-55 minutes. Lasagna is done when the noodles are al dente. Remove baked lasagna from the oven and let the lasagna sit, covered with the foil, on the counter for 10 minutes before slicing into desired sized slices.
Leftover lasagna can be stored in the refrigerator in an airtight container once the lasagna is cool enough to store.
Notes
Lasagna can be assembled ahead of time and baked later. Place assembled lasagna in the refrigerator until ready to bake. Remove the lasagna from the refrigerator 15-20 minutes prior to putting in 375-degree oven. Lasagna may need additional baking time, if your fridge is really cold.

It’s funny how when you said that this one of your favorite meals growing up how I tried to think of what my favorite meal was and was having a hard time thinking of what it was. At the end of your post when you asked what our favorite meals were growing up, I decided that I needed to figure it out. I thought about it and realized that we had potatoes & gravy, a vegetable, sometimes a salad, and some kind of meat pretty much every day. Once in a while we had a casserole. When I got into high school, once in a while we had turkey steaks and I decided that that was my favorite. We still had potatoes with that, but usually they were baked with sour cream and butter instead of the traditional farmer potatoes and gravy. Thanks for triggering some good memories. We have a much wider variety of dishes at my home now.
