Pumpkin Oatmeal Cookies made without any butter or fat, and free of dairy, nuts and sugar! For those on a diet, but still looking for a little treat, these pumpkin cookies are for you! As much as I love the desserts I create that are over-the-top indulgent, it’s nice to have snacks around the house that I can feel good about eating. These cookies are full of pure pumpkin and taste almost like eating cookie dough (probably because I under baked them as I usually do)!
Following up from #PumpkinWeek, which was full of pumpkin treats, I had a little bit of pure pumpkin leftover in the refrigerator that I wanted to experiment with, so I decided to try to make a healthy-ish cookie. And these cookies turned out pretty good!! They are definitely MUCH better tasting the second and third day after baking. If you try them straight from the oven, then you will probably think I have lost my mind. So just make these and then store them for a day or so and then try them!
So how do we make these cookies sweet while keeping them sugar free? Swerve! It’s my go-to sugar replacement because it doesn’t have a weird after taste.
COOKIE DOUGH!!!
I made BIG cookies….because that’s how I roll. And speaking of rolling….might as well roll these cookie dough balls in some sugar-pumpkin spice mixture right?!!
Ready to bake! These cookies do not have any fat in them. Which means they will not spread. You have the option of pressing the cookies down before baking them, or after baking them. I flattened mine one I pulled them from the oven.
Healthy Pumpkin Oatmeal Cookies

- 3/4 cup pure pumpkin
- 1/4 cup egg substitute (or 1 egg)
- 1/2 cup brown sugar substitute (I used Swerve)
- 1/2 cup powdered sugar substitute (I used Swerve)
- 1/4 teaspoon salt
- 1/2 teaspoon pumpkin spice extract (I used Rodelle)
- 1-1/2 teaspoons vanilla extract (I used Rodelle)
- 3 teaspoons pumpkin pie spice
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 cup all-purpose flour
- 1/2 teaspoon cornstarch
- 1/2 teaspoon baking soda
- 1-1/4 cups quick cooking oats
- 1/2 cup old-fashioned oats
- TOPPING:
- 1/4 cup granulated sugar substitute (I used Swerve)
- 1/2 teaspoon pumpkin spice
Instructions
In a large bowl mix together the pumpkin, egg, sugars, salt and extracts until well combined. Stir in the pumpkin spice, nutmeg, cinnamon. Gently fold in the flour, cornstarch and baking soda until barely combined. Fold in the oats. Cover dough and chill in the refrigerator for 4-hours or overnight.
Once chilled, preheat oven to 350-degrees and line a cookie sheet with parchment paper. In a small bowl, combine the sugar and pumpkin spice topping. Scoop 1/4 cup sized cookie dough balls and roll in the sugar-pumpkin spice. Drop cookie dough balls on prepared cookie sheet. Option to gently press cookies down to flatten. Bake in 350-degree oven for 11-minutes. Let cookies cool and set on the cookie sheet. Once cooled, transfer to an airtight container.
Notes
Store cookies at room temperature. Cookies stay fresh for several days and taste better if eaten 1-2 days after being made.
Yeah…they still look under done. And they taste like cookie dough. But that’s how I like my cookies! The pumpkin in the cookies keep them super moist.
