These haystack cookies are more like a candy than a cookie, but they are a Christmas baking classic! And super easy to make too…a combination of melted white chocolate, butterscotch chips and peanut butter poured over crispy chow mien noodles.
This is a super simple holiday recipe for you, that does not require any special equipment and can be made in the microwave. Make your haystacks as big or small as you like too! That’s the beauty of no bake cookies.
Haystack Cookies

- 1 (12-ounce) package butterscotch chips
- 1 (12-ounce) package white baking chips
- 1 cup creamy peanut butter
- 1 (12-ounce) package chow mien noodles
Instructions
Lay two large strips of foil or parchment paper on the counter. Measure out the peanut butter.
In a large, microwave safe bowl, add the butterscotch chips and white baking chips. Add a spoonful of peanut butter from the one cup measured out, into the bowl with the butterscotch and white chips. Set the remaining peanut butter aside.
In the microwave, melt the chips in 15-second increments, stopping to stir the mixture at every 15-second increment. It takes approximately 60-90 seconds to melt the chips. Once the chips have melted, remove the bowl from the microwave and stir in the peanut butter. Once all the ingredients are combined, fold in the chow mien noodles a little at a time, ensuring all the noodles are throughly coated in the candy mixture.
Use a standard sized cookie scoop to drop piles of cookies on the strips of foil. Option to immediately top with sprinkles.
Let cookies set for 1-2 hours on the counter before transferring to an airtight container for storage.
Notes
Store at room temperature in an airtight container. Cookies stay fresh for a week.
