I totally want to call these easy, no bake squares of goodness GRANMALLOW BARS….because they are a mash-up between a granola bar and a Rice Krispies marshmallow treat! If you are looking for a treat to make for the kids for their school lunches, or just looking for a great snack to have on hand, then you need to try this recipe.
INGREDIENTS YOU NEED TO MAKE THESE:
- Butter
- Mini Marshmallows
- Rice Krispies Cereal
- Granola
- Pumpkin Pie Spice (optional)
- White Chocolate Chips
- Vanilla Extract
- 8×8-inch Baking Pan
My friend Vicki owns My Favorite Indulgence granola company and makes the most AMAZING granola! She sent me a box of a few different varieties of her granola, so of course I had to use them to create some recipes with! For this recipe I used My Favorite Indulgence Pumpkin Spiced Granola. I am over the heat of Summer and the pumpkin flavor in these made me yearn for Fall weather.
Order some granola from My Favorite Indulgence (they have nut free varieties too!) or use what you have on hand.
Granola Cereal Bars

- 4 tablespoons unsalted butter
- 3 cups mini marshmallows
- 1/8 teaspoon pumpkin pie spice (optional)
- 1/2 teaspoon salt
- 1/3 cup white chocolate chips
- 2 teaspoons vanilla extract (I used Rodelle)
- 2 cups rice krispies cereal
- 2 cups granola, crushed into crumbs (I used one 10-ounce bag of My Favorite Indulgence Pumpkin Spice Granola)
Instructions
Line a 8x8-inch baking pan with foil and spray the bottom and sides with baking spray. Set aside.
In a large pot on the stovetop over medium-high heat, melt the butter. Once the butter has melted, stir in the marshmallows. Stir the mixture occasionally until the marshmallows have completely melted. Remove the mixture from the stove and immediately stir in the pumpkin pie spice, salt, chocolate chips and vanilla extract. Stir until the white chocolate has mostly melted completely into the mixture.
Fold in the rice krispies and crushed granola. Pour mixture into prepared pan and gently press into an even layer. Allow treats to cool completely in the pan before cutting into desired sized squares or rectangles.
Notes
Store in an air tight container at room temperature. Stays fresh for several days.
TIPS:
- Use any flavor granola you like…which is why the pumpkin pie spice is optional. Try adding a spice that goes with the flavor of granola you are using.
- Have all your ingredients out and ready to go before starting the mixture on the stove.
- Cut these into squares or long rectangles like granola bars.
