An easy no-bake cookie, flavored with graham cracker crumbs, for a sweet and richly flavored no bake oatmeal cookie. To make these cookies, all you need is a stovetop, a few simple ingredients and 10-minutes from start to finish!
A few tips when making no bake cookies:
- Read the recipe in its entirety first and have all of your ingredients measured out before you get started.
- You need to use QUICK cooking oats. Not instant oats. Not whole oats. This is important.
- Depending on your climate, you may need to add the full three cups of quick oats. I always add the last cup of oats slowly, and only add as many oats as needed to reach a semi-firm texture. You don’t want the mixture to resemble actual cookie dough (they will be too dry) and you do not want the mixture to be liquidy (they won’t set). When dropping the cookies onto the foil, they should have enough oats to hold their shape, but enough moisture that they still settle into the shapes you see in my pictures. So you have to find your happy medium.
Graham Cracker No Bake Cookies

- 1/2 cup unsalted butter
- 1/2 cup evaporated milk
- 1 cup white granulated sugar
- 3/4 cup white chocolate chips
- 2 teaspoons vanilla extract (I used Rodelle Pure Gourmet Vanilla Extract)
- 1/2 teaspoon salt
- 3/4 cup fine graham cracker crumbs
- 3 cups quick cooking oats
Instructions
Lay a long strip of foil, parchment paper of a Silpat on a flat surface. In a medium sized pot, on top of the stove top, add the butter, milk and sugar. Melt the ingredients over medium-high heat, stirring occasionally. As soon as the mixture comes to a rolling boil, set the timer for 1-minute. Let the mixture boil for the minute, stirring constantly. Immediately remove the pot from the stove once the minute is up.
Stir the vanilla extract and salt into the butter-sugar mixture. Add the white chocolate chips into the mixture and stir until chips are mostly melted and incorporated. Add the graham cracker crumbs and oats to the mixture, stirring until all ingredients are incorporated. Use a cookie scoop to drop standard sized cookies onto the foil. Cookies will take 2-3 hours to set.
