Graham Cracker Blondie Bars

That classic graham cracker taste, mixed into a buttery, sugary cookie dough and baked to soft blondie perfection.  I am a HUGE blondie lover because of how quick and easy they are to make and that it makes enough to feed a crowd!

I bet if you went into your pantry right now, you would find all the ingredients you need to make these.  That’s why I love blondies.

This recipe uses one sleeve (or nine sheets) of graham crackers.  Give or take.  After measuring out your crumbs for the blondie batter, you are going to use the rest of your leftover crumbs for the topping.

I used honey flavored graham crackers in these blondies.  And the easiest way to make graham cracker crumbs?  Place the entire sleeve of graham crackers, still in the plastic, inside of a ziplock bag.  Use the bottom of a heavy glass to smash the graham crackers into fine crumbs.

Graham Cracker Blondies

Serves: 20 Cooking Time: 23-28-minutes

Ingredients

  • 1 cup unsalted butter, room temperature
  • 2 cups light brown sugar, packed
  • 2 eggs, room temperature
  • 1 tablespoon vanilla extract (I used Rodelle gourmet vanilla extract)
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1-1/3 cups all-purpose flour
  • 1-1/3 cups fine graham cracker crumbs
  • 2 teaspoons baking powder
  • 2 cups milk chocolate chips (optional)
  • GRAHAM CRACKER-SUGAR TOPPING:
  • 2 tablespoons white granulated sugar
  • 2 teaspoons graham cracker crumbs

Instructions

Preheat oven to 350-degrees. Line a 9x13-inch baking pan with parchment paper and spray with baking spray. Set aside.

In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and beat on medium-high speed until light and creamy. Add the brown sugar to the butter and beat until light and fluffy. Scrape down the sides of the bowl as needed. Add the eggs to the mixture one at a time, beating the first egg in completely before adding the second egg. Add the vanilla extract, nutmeg and salt to the mixture and mix on medium-high speed until fully incorporated.

Change the mixer speed to low and add the flour, graham cracker crumbs and baking powder to the mixture. Mix until barely incorporated. Fold in the chocolate chips if using. Remove the bowl from the mixer and use a rubber scraper to ensure all ingredients are incorporated. The batter will be thick. Pour Batter into prepared pan and spread evenly into the pan. Put a little water on your fingers to help evenly spread the batter into the pan. Set aside.

PREPARE GRAHAM CRACKER-SUGAR MIXTURE: In a small bowl, combine the sugar and graham cracker crumbs and stir until combined. Pour mixture evenly onto the top of you blondie batter and slightly press into the dough. Bake blondies in 350-degree oven for 23-28-minutes, or until a toothpick inserted in the center comes out without raw batter on it. Do not over bake. Remove the blondies from the oven and let set and cool completely before slicing into desired sized squares.

Notes

Blondies may appear underdone, but they continue to set after removing them from the oven. Let blondies set for 2-3 hours before cutting into bars.

These blondies have that nice crackly top thanks to the sugar and graham cracker crumb topping, but then you get that super soft, buttery cookie as you bite into them.

    Graham crackers are one of my favorites! These sound SO GOOD but I don’t think I can make them until I have plenty of people around to help me eat them. They sound addictive!

    Hi. I made these just the way you said and mine turned out way more dry than yours look in your picture. I’m wondering what I did wrong. I put them in for 28 minutes at 3:50

      Oven temperatures can vary and not be accurate and different types of pans can bake more quickly. I will change the baking time to start checking towards the 23-minute mark.
