Gingerbread-flavored fudge, made easily in the microwave with spices, molasses and dry spice cake mix added to make this fudge like taking a bite of gingerbread! No candy thermometer is required to make this easy microwave fudge either!
I am all about the flavors of gingerbread this holiday season, so when trying to decide what to make for our annual holiday bake day with my family, I knew I wanted to make some kind of gingerbread fudge! I had seen cake batter fudge before and figured I could use spice cake mix to help bring that gingerbread flavor to this fudge.
White chocolate chips and sweetened condensed milk are the base for which we make our fudge. Melt those ingredients together (with a pat of butter) and then stir in the rest of the ingredients. Let set for a few hours and then MAGIC!! We have FUUUUDDDGGGGEEEEEEE!!

Gingerbread Fudge

- 2 cups white chocolate chips
- 1 (14-ounce) can sweetened condensed milk
- 2 tablespoons unsalted butter, room temperature
- 3/4 cup spice cake mix (dry)
- 1 teaspoon vanilla extract (I used Rodelle Bakers Extract)
- 1 tablespoon molasses
- 1/8 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- holiday sprinkles (optional)
Instructions
Line an 8-inch by 8-inch square pan with foil and spray the bottom and sides with baking spray. Set aside. In a medium-sized, microwaveable safe bowl, add the white chocolate chips, sweetened condensed milk and butter. Microwave for 60-90 seconds, stopping every 15-seconds to stir the mixture. Heat mixture only until the white chocolate chips have melted.
Remove the bowl from the microwave and stir in the dry spice cake mix, vanilla extract, molasses, salt, nutmeg, cinnamon, cloves and ginger. Stir the mixture vigorously until all the ingredients are fully combined.
Pour mixture out into prepared pan and top immediately with holiday sprinkles (optional). Let the fudge set on the counter at room temperature for 30-60 minutes to set before transferring to the refrigerator to set completely. Once fudge has chilled and set (3-hours), cut into desired sized squares.
Notes
Store fudge in the refrigerator in an air tight container. Fudge stays fresh for 1-2 weeks.
