Giant Pumpkin Donut Cake

Do you know what’s better than a pumpkin donut??  A GIANT pumpkin donut cake of course!  So instead of making normal sized baked pumpkin donuts, I used a 10-inch ring mold pan and made one giant donut.  So fun!

Dixie Crystals was so kind to gift us bloggers participating in #PumpkinWeek with a gift card to Amazon to buy whatever baking supplies we needed!  How awesome is that?!  I knew I wanted to make pumpkin donuts this week, but I already own two donut pans.  But what I didn’t own is a large donut cake pan.  I found one made by Fat Daddio’s and was beyond excited to make this larger than life donut!!

Now just gather up a few ingredients…Dixie Crystals Pure Cane Sugar is a MUST!

Giant Pumpkin Donut Cake

Serves: 20 Cooking Time: 55-minutes

Ingredients

  • CAKE:
  • 3/4 cup canola oil
  • 1-1/2 cups white granulated sugar (I used Dixie Crystals)
  • 1/2 cup light brown sugar, packed (I used Dixie Crystals)
  • 3/4 cup pure pumpkin
  • 3 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 1/4 cup milk (I used unsweetened vanilla almond milk)
  • VANILLA ICING:
  • 2 tablespoons butter
  • 1 tablespoons hot water
  • 1 teaspoon vanilla extract
  • 3-1/2 cups powdered sugar (I used Dixie Crystals)

Instructions

Preheat oven to 325-degrees. Spray the bottom and sides of 10-inch x 3-inch ring mold pan with baking spray. A standard sized Bundt pan can also be used instead. It just won't have the look and shape of a donut.

PREPARE CAKE BATTER: In a large bowl, add the oil, white sugar, brown sugar and pumpkin. Stir until combined. Add the eggs, one a time, to the mixture. Stir each egg into the mixture completely before adding each additional egg. Add the vanilla extract and pumpkin pie spice into the mixture. Add the baking powder and flour to the mixture, stirring until just combined. Stir in the milk.

Pour batter into prepared pan and bake in 325-degree oven for 50-55 minutes, or until a toothpick inserted in the middle comes out without raw batter on it.

Remove baked cake from oven and set on a wire rack to cool. Let the cake cool completely in the pan before turning cake out onto wire rack.

PREPARE ICING: In a small bowl, add the butter. Melt the butter in the microwave. Once melted, remove the bowl of butter from the microwave and stir in the water, vanilla extract and powdered sugar. Stir until combined and smooth. If icing is too thick, add hot water in small amounts until desired consistency is reached. If icing is too thin, add powdered sugar until desired consistency is reached. Spoon the icing on top in an even layer, like an iced donut. Add sprinkles if desired.

Notes

Store cake at room temperature in an airtight container. Cake will stay fresh for several days. Un-iced cake can be wrapped and frozen for 4 weeks.

Fresh from the oven!  Resist all temptation to remove the cake from the pan though.  It is VERY IMPORTANT to wait until the cake has cooled completely before inverting it onto a cake plate.  I might have been a little impatient with mine.  So learn from my mistakes!

Once the donut has cooled completely, make the icing and spread it on top.  I used Dixie Crystals Powdered Sugar for my icing….sooooo smooth!!

It’s a GIANT donut!!!

Now it’s up to you whether you want to enjoy a slice of this for breakfast or dessert (or both!).  It tastes like the pumpkin loaf cake from Starbucks!!  And this recipe makes a ton!  Happy baking friends!!
