From scratch, strawberry cupcakes, made using fresh strawberries. No artificial ingredients or extracts to flavor these strawberry cupcakes. Utilize the bounty of fresh, ripe strawberries to make these perfectly sweetened cupcakes.
I love strawberries and get so excited when strawberries are in season. Plump and juicy…they are one of my favorite fruits to have in the refrigerator to snack on. So why not make cupcakes out of them?! I had a cupcake order for strawberry cupcakes and I was determined to make a strawberry cupcake that was full of fresh, natural ingredients. No weird pink color or artificial after taste. And these cupcakes deliver that!
Before we get to baking, I have to share with you a treat I used to eat as a kid during strawberry season…my momma would cut up fresh strawberries, put the strawberries in a small bowl, sprinkle sugar over the strawberries and add milk just to the top of the strawberries. It tasted like strawberries and cream and after you ate all the strawberries, you have a yummy strawberry milk. Yeah we was fancy at my house growing up hahahaha.
Ok, back to these cupcakes. Chop your strawberries up finely and add sugar on top, to create a sweet strawberry-sugar mixture to fold into your cupcakes.
Fresh Strawberry Cupcakes

- STRAWBERRY MIXTURE:
- 2 cups finely chopped strawberries + 2 tablespoons granulated sugar
- CUPCAKES:
- 3 cups all-purpose flour
- 2-1/2 teaspoons baking powder
- 1/4 teaspoon salt
- pinch of nutmeg
- 1 cup unsalted butter, room temperature
- 2 cups white granulated sugar
- 2 eggs
- 4 egg whites
- 1 tablespoon vanilla extract
- 1/2 cup milk (I used whole milk)
Instructions
Preheat oven to 350-degrees. Line two cupcake tins with cupcake liners. Set aside.
PREPARE STRAWBERRIES: Finely chop fresh strawberries until you get two full cups of finely chopped strawberries. Add the strawberries to a bowl and stir in two tablespoons of sugar into the strawberries and let set aside.
PREPARE CUPCAKE BATTER: In a medium-sized bowl, whisk together the flour, baking powder, salt and nutmeg. Set aside.
In your stand mixer, affixed with the paddle attachment, add the butter and mix on medium-high speed for 2-3 minutes or until light and fluffy. Scrape down the sides of the bowl as needed. Add the sugar to the butter and mix until combined. Change the mixer to low speed and add the eggs, one at a time, mixing the egg in completely before adding each egg and egg whites. Mix in the vanilla extract.
Keep the mixer on low speed and add half of the flour mixture, mixing until just combined. Add the entire 1/2 cup of milk, mixing until combined. Add the remaining flour mixture, mixing until just barely combined. Remove the bowl from the mixer and scrape down the sides of the bowl, ensuring all ingredients are incorporated. Use a slotted spoon to add the strawberry mixture into the batter without the excess liquid. Stir the strawberry mixture into the batter until just combined.
Fill cupcake liners 2/3 full of batter. Bake cupcakes, one tin at a time, in 350-degree oven for 20-22 minutes, or until a toothpick inserted in the middle comes out clean.
Remove baked cupcakes from oven and let set in the cupcake tin for 5-7 minutes before transferring to to a wire rack to cool completely before frosting.
Notes
Store cupcakes in an airtight container at room temperature. Cupcakes stay fresh for 4-5 days.
After these have cooled, top them with my yummy, from scratch Vanilla Buttercream Frosting. And add sprinkles 🙂
