French toast made easy by means of a casserole, which includes soft bread, maple syrup and maple extract— for all the maple flavors! If you love french toast, but not all the work that goes into making each and every individual slice of french toast, then this is the recipe for you!
This recipe takes only 5-minutes to whip together and is made the SAME morning it is baked, because the bread used is soft and fresh.
This recipe would be perfect for using up those odds and ends of the last of that loaf of white bread in the pantry, as well as those few remaining hot dog buns and hamburger buns (without sesame seeds), that will probably go uneaten.
French Toast Casserole

- 1/2 cup unsalted butter, melted
- 2 eggs + 1 egg yolk, room temperature
- 1/2 cup coffee creamer (or milk), room temperature
- 1/2 cup white granulated sugar
- 1/2 cup light brown sugar, packed
- 1/3 cup pure maple syrup
- 1 teaspoon vanilla extract (I used Rodelle Gourmet Vanilla Extract)
- 1-1/2 teaspoons maple extract
- 1-1/2 tablespoons ground cinnamon (I used Rodelle Ceylon Cinnamon)
- 1/8 teaspoon nutmeg
- 1/4 teaspoon salt
- 16-ounces fresh, soft bread diced into 2-inch x 2-inch pieces
Instructions
Preheat oven to 350-degrees. Line a 9x9-inch baking pan with foil and spray the bottom and sides of the pan with baking spray. Set aside.
In a large bowl whisk together the melted butter, eggs and egg yolk, coffee creamer, white sugar, brown sugar, maple syrup, vanilla extract, maple extract, cinnamon, nutmeg and salt. Once all the ingredients are thoroughly incorporated, fold in the bread pieces into the bowl, coating the bread pieces completely with the mixture. Pour the mixture out into prepared pan.
Bake casserole for 30-35 minutes. When done, the casserole should look moist on top with the mixture baked up so that it is not liquid still. Remove from the oven and let set for 5-minutes before cutting into desired sized squares.
Notes
Leftovers can be stored in an airtight container in the refrigerator and reheated in the microwave for 15-20 seconds (or longer sending on how hot you like it).
