Rich, fudgy, flourless brownies on top of a chocolate chip cookie crust. This recipe is a simple, one-bowl recipe with minimal ingredients. Plus who doesn’t love brownies?!
For the cookie crust, you can use your favorite store bought cookie…the crunchier the better (think Chips Ahoy or something similar). To make this recipe completely gluten free, just use gluten free cookies.
Flourless Brownies with Cookie Crust

- COOKIE CRUST:
- 1/2 cup butter, melted
- 3-1/2 cups crunchy chocolate chip cookie crumbs
- 2 tablespoons white granulated sugar
- BROWNIES:
- 1/2 cup unsalted butter
- 1 cup chocolate chips
- 3/4 cup white granulated sugar
- 2 teaspoons vanilla extract (I used Rodelle Baker's Extract)
- 1 teaspoon salt
- 3 eggs, room temperature
- 1/4 cup cocoa powder (I used Rodelle Gourmet Cocoa Powder)
Instructions
Preheat oven to 350-degrees. Line an 8x8-inch baking pan with parchment paper and spray the sides and bottom with baking spray. Set aside.
CRUST: In a medium sized bowl, combine the melted butter, fine cookie crumbs and sugar. Mix until combined and pour into an even layer in prepared baking pan.
BROWNIES: In a microwave safe bowl, add the butter and chocolate chips. Place bowl in the microwave and microwave in 15-second increments, stopping to stir the mixture every 15-seconds to prevent scorching. Microwave until the chocolate chips and butter are completely melted, approximately 1-minute. Remove the bowl from the microwave and stir in the sugar, vanilla extract and salt. Stir in the eggs, one at a time. Stir in the cocoa powder and continue stirring until mixture is smooth and glossy.
Pour brownie batter over the cookie crust and bake in 350-degree oven for 25-30 minutes, or until a toothpick inserted in the middle comes out without raw batter on it.
Notes
Any crunchy store bought chocolate chip cookie will work for the crust (Chips Ahoy, Famous Amos, etc).
It’s important to let your brownies cool completely before cutting into squares. Or if you are impatient like me, pop the pan into the refrigerator for 20-minutes, then cut.
