Easy Enchilada Casserole

Five ingredients and a few minutes of prep are all you need to make your own delicious enchiladas at home!  I used taco seasoned ground turkey, chunky green salsa, green enchilada sauce, pre-shredded Mexican cheese and soft flour tortillas in this easy weeknight casserole recipe.  

Substitute the green sauce for a chunky tomato salsa and red enchilada sauce, and if you prefer lean ground beef over ground turkey, then use that too!  Change it up to make it how your family likes it.

Easy Enchilada Casserole

Serves: 8 Cooking Time: 35-minutes

Ingredients

  • 1 pound lean ground meat (I used Jenny-O Taco Seasoned Ground Turkey)
  • 1 cup thick and chunky salsa verde
  • 1 (19-ounce) can green enchilada sauce
  • 2 cups shredded Mexican cheese
  • 8 (8-inch) soft flour tortillas

Instructions

Preheat oven to 350-degrees. Spray a 9x13-inch baking dish with baking spray. Set aside.

Over medium heat on the stove top, brown your ground meat. Drain the excess fat from the pan and return the pan to the stove and add the entire jar of salsa into the ground meat. Cook for 5-minutes over medium heat. Remove the pan from the heat.

Add half the can of enchilada sauce to the bottom of your 9x13-inch baking dish, evenly covering the bottom of the dish. Save the remaining enchilada sauce to cover the enchiladas after you roll them up.

Add approximately 1/4 cup of your meat-salsa mixture onto the middle of a tortilla, sprinkle with cheese and fold the left side over the top of the mixture and tightly roll the tortilla up. Place enchiladas seam side down in the baking dish. Repeat process with remaining seven tortillas. Pour the remaining enchilada sauce over the top of the enchiladas and top with remaining cheese.

Cover with foil and bake in 350-degree oven for 35-minutes. Let set for several minutes on the counter before serving.

Notes

Store leftover enchiladas in an airtight container in the refrigerator.

    ooh yum! Look at all that delicious sauce. Enchiladas are one of my favourite meals though I hardly ever make them. I usually make my own enchilada sauce when I do so it’s time consuming, that’s probably why! This looks super quick and easy though and so yummy. I need to try this with turkey sometime, I’ve only made chicken enchiladas. And green sauce (tamatilla) is the best!! I haven’t tried making it but it’s my choice at a restaurant. Gotta get me this sauce! Hope you’re having a great week, lovely!

    My wife and I enjoy enchiladas and smothered burritos with “Christmas sauce” – red and green both. We also have been using low-fat Greek plain yogurt in place of topping these with sour cream (mixed yogurt – garlic pwdr, onion pwdr, and lime juice).
    Thanks for this recipe, as we are fans of both La Victoria and Las Palmas products. We will try this asap.

    Looks good, Kelly! The other thing I don’t like about packaged shredded cheese is that if I don’t use the whole package right away, it goes moldy very quickly! I love the convenience at times, but it’s only worth it if I’m going to use the whole package. We love green sauces, too.
