Fat Free Oatmeal Date Cookies

Fat free oatmeal date cookies are made using date paste instead of butter and one egg white. And by using date sugar, there’s no refined sugar in this recipe either! It’s as healthy and guilt free you can get for a cookie that also tastes amazing.

I used the date paste and date sugar from Let’s Date! You can make your own date paste by finely puréing soft dates in a blender or food processor until it forms a smooth paste. And because the dates are so naturally sweet, this recipe also uses less sugar.

Ingredients

  • 1/4 cup date paste
  • 1 egg white (no yolk)
  • 1/4 cup date sugar (or white sugar)
  • 1/4 cup warm water
  • 2 teaspoons vanilla extract (I used Rodelle Gourmet Vanilla Extract)
  • 1-2 teaspoons cinnamon
  • Pinch of nutmeg (optional)
  • 1/2 teaspoon salt
  • 1/4 cup flour
  • 1 teaspoon baking soda
  • 1-1/2 cup quick oats

Instructions

In the bowl of a stand mixer, affixed with the paddle attachment, add the date paste, egg white and sugar. Mix until smooth. Add in the vanilla extract, salt, cinnamon and nutmeg. Mix until combined.

With the mixer on low, add the flour, baking soda and oats. Mix until just combined.

Wrap dough in plastic wrap and chill for 1-2 hours or overnight.

Once chilled, preheat oven and to 350-degrees and scoop standard sized cookie dough balls onto a parchment paper lined cookie sheet. Slightly press the cookies into a flat cookie shape, as these do not spread when baking. Bake for 7-minutes for a soft cookie or longer if you like a crunchier cookie.

Notes

Cookies stay fresh for several days at room temperature in an airtight container.
