Everything Blondie Bars…like an everything bagel, except it’s all sweet! Do you have partial bags of chocolate chips, nuts, marshmallows or a few remaining cookies in the package?? If you do, then I have the perfect blondie cookie base for you to add anything to, which will create a dessert that’s sure to impress. And it’s easy peasy!
I am always baking (that shocked you, right?!), so I always end up with a little bit of this, a little bit of that, a few leftover store bought cookies, etc. It’s never enough to make another recipe out of, but these Blondie Bars are perfect for all your leftover baking chips, candy, cookies etc. So let’s clean out the pantry and make some yumminess! I had some leftover Mallow Bits from some S’Mores Bars I made, leftover Nutter Butter cookies from these brownies and some peanut butter M&M’s (okay those were for late night snacking), which all weren’t enough on their own to make anything, but I threw them all together to make these Everything Blondie Bars!
My blondie bars are quite popular and I have made them for bake sales, parties, work, etc. They are super easy to make and everyone always loves them. When I need to make a quick dessert, it is my go-to recipe. Plus you probably already have all the ingredients needed for the blondie base on hand!
These blondies are perfect for Valentine’s Day with the pretty red, white and pink peanut butter M&M’s!
Everything Blondie Bars

- 1 cup butter, room temperature
- 2 cups light brown sugar, packed
- 2 eggs, room temperature
- 1 tablespoon vanilla extract
- 2-2/3 cups all-purpose flour
- 2 teaspoons baking powder
- 2 cups of mix-in's (I used 1/2 cup peanut butter M&M's, 1/2 cup Mallow Bits and 12 Nutter Butter cookies broken into pieces)
Instructions
Preheat oven to 350-degrees. Line a 9x13-inch baking dish with parchment paper or foil and spray with baking spray. Set aside.
In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and beat on medium-high speed until light and creamy. Add the brown sugar to the butter and beat for 1-2 minutes or until light and fluffy. Scrape down the sides of the bowl as needed. Add eggs one at a time to the sugar mixture, beating the egg in completely before adding the second one. Add the vanilla extract and mix until incorporated. Turn the mixer to low speed and slowly add the flour and baking powder until barely combined. Do not overmix.
Remove bowl from mixer and fold in your mix-in's by hand. Pour batter (it will be thick like cookie dough) out into prepared pan and press evenly into the pan.
Bake in 350-degree oven for 30-minutes. Remove from oven and let set completely before cutting into desired sized bars.
Notes
Store in an airtight container at room temperature. Blondies will stay fresh for several days.
